Mexican Zucchini and Corn

Heat oil in large skillet over medium heat
- 2 tbs. olive oil
- 1 medium onion, chopped(1/2 cup)
- 3 medium zucchini, cut into 1/2 inch slices
- 1 pkg. (10 oz) frozen corn
- 1 tsp. oregano
- 1/2 tsp. salt
- 1/8 tsp pepper
- 1 can (28 oz.) Italian tomatoes
- I used diced tomatoes with basil, garlic and oregano.
Tropical Carrot Cake

1. For the pudding: Process pineapple chunks and concentrate in food processor until smooth
- You'll need one 14-ounce bag of sweetened shredded coconut for this recipe. To toast the coconut for the frosting, spread it on a rimmed baking sheet and bake in a 325-degree oven, stirring often, until golden brown, about 15 minutes.

- 1 pound frozen pineapple chunks, thawed
- 1/2 cup frozen pineapple juice concentrate, thawed

- 3/4 teaspoon ground ginger

- 1 cup sweetened shredded coconut
- 1 1/4 cups granulated sugar
- 1/2 cup packed light brown sugar
- 4 large eggs
- 1 1/2 cups vegetable oil
- Cream Cheese Frosting
- 12 tablespoons unsalted butter, softened
- 3 cups confectioners' sugar
- 16 ounces cream cheese, cut into 8 pieces and softened
- Pinch salt
- 3 cups sweetened shredded coconut (see note)
Treadmill Worthy Brownies

Great with buttercream or fudge frosting
- 1 1/2 c flour
- 2 c sugar
- 10 Tbsp cocoa
- 1 c soft shortening or 1 stick oleo & 1/2 cup shortening
- 4 lg eggs, beaten
- 1 tsp vanilla
- 1 c nuts, chopped ( pecans or walnuts)
- Try Diamond of California Nuts
- CHOCOLATE BUTTERCREAM FROSTING
- 1 bx powdered sugar
- 4 Tbsp cocoa
- 1 stk butter or margarine, softened (softened)
- 3-4 Tbsp milk
- 1 tsp vanilla

- 2 cups unbleached all-purpose flour, plus more for dusting the board (if you can get White Lily flour, your biscuits will be even better)
- 1/4 teaspoon baking soda
- 1 tablespoon baking powder (use one without aluminum)
- 1 teaspoon kosher salt or 1 teaspoon salt
- 1 teaspoon salt
- 6 tablespoons unsalted butter, very cold

Chicken Tostado Salad

Directions Preheat oven to 400
- 4 corn tortillas
- 3 teaspoons extra-virgin olive oil
- 3/4 cup grated Monterey Jack cheese (2 ounces)
- 1/2 small red onion, diced small
- 1/2 teaspoon chili powder
- 1 garlic clove, minced
- Breast meat from 1 rotisserie chicken, torn into bite-size pieces
- Coarse salt and ground pepper
- 1 tablespoon plus 1 teaspoon fresh lime juice
- 1/2 head romaine lettuce (6 ounces), shredded
- 1 tomato, seeded and chopped
- 1 avocado, halved, pitted, peeled, and diced small
- Fresh cilantro, for serving
