Beef enchiladas with chipotle-pasilla chili gravy

- For the pasilla-chipotle chili gravy:
- 1 or 2 dried chipotle chiles (depending on how hot you want it), seeds and stems removed
- 4 dried pasilla chiles, seeds and stems removed
- 1/4 medium yellow onion, chopped
- 4 cloves garlic, chopped
- 1 teaspoon ground cumin
- 1/2 teaspoon oregano
- Pinch of ground allspice
- 3 cups beef broth
- 2 tablespoons lard or vegetable oil
- 2 tablespoons all-purpose flour
- For the enchiladas:
- 1 pound ground beef
- 1/2 medium yellow onion, diced and divided
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- Salt and black pepper to taste
- 1 tablespoon of lard or vegetable oil
- 12 corn tortillas
- 2 cups shredded cheddar cheese (8 ounces)

Directions Preheat oven to 350 degrees
- 3 cups old-fashioned rolled oats
- 1 cup all-purpose flour
- 2 tablespoons all-purpose flour
- 1/2 cup toasted wheat germ
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon coarse salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed light-brown sugar

- 1 teaspoon pure vanilla extract

Hard-Cooked Eggs

Place eggs in medium saucepan, cover with 1 inch of water, and bring to boil over high heat
- Makes 3 eggs
- To center the yolks, turn the carton of eggs on its side in the refrigerator the day before you plan to cook the eggs.

Pumpkin Pie (Self Crust)

1. Mix all ingredients except water together in a large bowl
- 1/2 c. fat free egg substitute
- 15 oz can pure pumpkin
- 1/3 c. white sugar
- 1/3 c. packed brown sugar
- 1/4 tsp. salt
- 1 1/2 tsp cinnamon
- 3 tbsp white flour
- 1 c. dry milk
- 1 c. water

- 1 (8 ounce) cans crescent rolls
- 1 (8 ounce) packages brown and serve sausages
- 2 cups monterey jack cheese, shredded
- 4 eggs, slightly beaten
- 3/4 cup milk
- 2 tablespoons chopped green peppers
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon oregano

- 1 1 10-inch 6 to 8 onion in 10-inch skillet over medium heat 6 to 8 minutes, stirring occasionally, until sausage is no longer pink; drain. Stir in tomato sauce, basil and salt.
- 2 2 1 Mix 1 cup of the mozzarella cheese and the ricotta and Parmesan cheeses. (Refrigerate remaining mozzarella cheese while lasagna cooks.)
- 4 4 4 to 6 cook on Low heat setting 4 to 6 hours or until noodles are tender.
- 5 5 1 10 top of lasagna with remaining 1 cup mozzarella cheese. Cover and let stand about 10 minutes or until cheese is melted. Cut into pieces.

Directions In a large skillet, saute the onions, green peppers, celery and garlic in butter until crisp-tender
- 3 large onions, chopped
- 3 large green peppers, chopped
- 3 celery ribs, chopped
- 12 garlic cloves, minced
- 1 1/2 cups butter
- 3 pounds fully cooked smoked sausage, cut into 1/2-inch slices
- 9 cups chicken broth
- 6 cups uncooked long grain rice
- 3 cups chopped fresh tomatoes
- 1 1/2 cups chopped green onions
- 1/2 cup minced fresh parsley
- 3 tablespoons Worcestershire sauce
- 3 tablespoons hot pepper sauce
- 3 tablespoons browning sauce
- 1 tablespoon salt
- 1 tablespoon pepper
