- .25 cup(s) mayonnaise
- 3 tablespoon(s) cider vinegar
- 2 teaspoon(s) sugar
- .5 teaspoon(s) salt
- .25 teaspoon(s) ground black pepper
- 2 cup(s) (about 1/2 head) thinly sliced green cabbage
- 1 cup(s) (about 1 large) grated carrot
Oatmeal Muffins

Preheat the oven to 400 degrees Fahrenheit
- 3/4 cups old-fashioned rolled oats
- 1/2 cup whole wheat flour
- 1/4 cup packed light brown sugar
- 1 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/8 teaspoon allspice
- 1/2 cup buttermilk
- 1 1/2 tablespoons extra-light olive oil
- 2 T egg substitute
- 1/2 C raisins
Chicken Giardino (Olive Garden Recipe)

Sauce Preparation: MELT butter in a sauce pan over medium heat
- Sauce:
- 1 Tbsp butter
- tsp dry thyme
- tsp fresh rosemary, finely chopped
- 1 tsp garlic pepper
- 1 Tbsp cornstarch
- cup chicken broth
- cup water
- cup white wine
- 1 Tbsp milk
- 1 tsp lemon juice
- Salt and pepper to taste
- Chicken:
- 2 lbs boneless, skinless chicken breasts, sliced width-wise into strips
- cup extra-virgin olive oil
- 2 small rosemary sprigs
- 1 clove garlic, finely minced
- Juice of lemon
- Vegetables:
- cup extra-virgin olive oil
- bunch fresh asparagus (remove bottom inch of stem; cut remainder into 1 pieces)
- 1 zucchini, julienne cut
- 1 yellow summer squash, julienne cut
- 2 roma tomatoes, cut into pieces
- red bell pepper, julienne cut
- 1 cup broccoli florets, blanched
- cup frozen peas
- 1 cup spinach, cut into pieces
- cup carrots, julienne cut
- 1 lb farfalle pasta (bow ties), cooked according to package directions
Black Bean Salad

. Combine all ingredients in a medium size bowl and toss gently
- 1 1/2 cups cooked black beans
- 3 scallions (green onions) sliced
- 2 ripe plum tomatoes, diced
- 1/3 cup corn, fresh, frozen or canned
- 2 tablespoons olive oil
- 1 tablespoon fresh lime juice
- 2 tablespoons freshly chopped cilantro
- salt and freshly ground black pepper to taste
- minced garlic and/or hot peppers may be added for an extra zesty flavor

- 1 15-ounce can black beans, rinsed and drained
- 1 cup frozen organic corn, thawed and drained
- 12 cherry or grape tomatoes, halved
- 1/2 cup chopped scallions
- 2 cloves garlic, pressed
- 1/2 cup diced red bell pepper
- 1/4 cup chopped cilantro
- 2 tablespoons extra virgin olive oil
- 3 tablespoons freshly squeezed lime juice
- 1/4 teaspoon ground cumin
- Mix all the ingredients in a large bowl, cover, and let marinate in the refrigerator for a few hours before serving.
Banana-Cinnamon Cake

1 Heat oven to 350°F (325°F for dark or nonstick pan)
- 1 box Betty Crocker® SuperMoist® yellow cake mix
- 1/2 cup water
- 1 cup mashed very ripe bananas (2 medium)
- 1/2 cup butter or margarine, softened
- 2 teaspoons ground cinnamon
- 3 eggs
- 1/2 cup chopped walnuts
- 1/2 cup Betty Crocker® Rich & Creamy cream cheese frosting
- 2 to 3 teaspoons milk
- 1/4 teaspoon ground cinnamon
Country Breakfast Casserole

In a large skillet, cook sausage and onion till no pink remains

- 1/2 cup finely chopped onion

- 1/2 pound ground sausage
- 1/4 cup butter or margarine
- 1/3 cup all-purpose flour
- 3 1/4 cups milk
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/8 teaspoon Italian seasoning
Warmed Greens Salad

Directions WASH and spin the greens until very dry
- 8 cups mixed baby greens, baby lettuces, or mixed Mediterranean greens
- 1/4 cup chopped walnuts
- 1 tablespoon olive oil
- 1 teaspoon walnut oil
- 2 teaspoons balsamic vinegar
- 1/4 teaspoon sea salt
- 3/4 pound salmon fillet
- Ken's Lite Accents Honey Mustard salad spray
- WASH and spin the greens until very dry.
