Strawberry Cheesecake Recipe (1/2 Recipe) or Vanilla

Ingredients

  • 1 1/2 c. sugar
  • 1 1/2 T. flour
  • pinch of salt
  • 4 c. milk
  • 2 eggs, lightly beaten
  • 4 oz. package cream cheese
  • 1 tsp. vanilla
  • 1 1/2 cups mashed fresh OR frozen unsweetened strawberries
  • 1 c. heavy whipping cream

Step 1

Mix sugar, flour and salt into a saucepan. Gradually add milk and mix until smooth. Bring to boil over medium heat; cook and stir for 2 minutes.
Remove from heat;cool slightly. Whisk a small amount of hot mixture into the eggs to temper the eggs. Stir in some more of the hot liquid and stir. Then stir this into the saucepan with the rest of the hot liquid. Heat until the liquid is 160 degrees. While this is heating add chopped up pieces of the cream cheese and stir to dissolve. Remove from heat and place saucepan into a sink with ice water to cool down quickly. Let sit for a couple of minutes to cool down. Stir in vanilla. Place plastic wrap onto surface of custard. Place in refrigerator for several hours or overnight. Stir strawberries and cream into custard. Using my Kitchen Aid ice cream bowl that has been in the freezer for at least 15 hours add mixture. Turn mixer to 1 and let it mix for about 20 to 25 minutes. This will be softserve. Remove ice cream from my freezer bowl and put into a Tupperware type container. Let ice cream ripen or firm up for several hours in refrigerator freezer for 2 to 4 hours.

To make Vanilla Ice Cream: Do not add strawberries and increase the vanilla to 2 tablespoons.
