- 2 tsp salt
- 2 tsp garlic powder
- 2 tsp dried oregano
- 1 tsp dried rosemary, crushed
- 1 tsp caraway seeds
- 1 tsp dried marjoram
- 1 tsp celery seed
- 1/4 tsp cayenne pepper
- 1 boneless beef chuck roast (3-4 pounds halved)
- 8-10 sandwich rolls halved (I serve plain with no rolls)

Shredd both cabbages, chop scallions
- 1/2 head red cabbage
- 1/2 head green cabbage
- 4 scallions (chopped) use all of the scallion

- 2 TBLSP chopped fresh cilantro
- 1 TBLSP lime juice
- 1 tsp grated lime zest
- 1/2 cup chopped onion
- 1/4 tsp tabasco sauce

- 1 jalapeno, seeded, deveined and finely chopped

- ENCHILADAS
- 1 rotisserie chicken, meat removed and shredded (skin and bones discarded)
- 2 cups grated cheddar
- 1 cup sour cream
- 1/2 small red inion, finely chopped
- Salt and freshly ground black pepper
- 6 (8 inch flour tortillas)

- 1/4 cup lemon slices
- 1/4 cup lime slices
- 1/4 cup orange slices
- 1/4 cup pineapple chunks (FRESH)
- About the same portion size of plums, cherries or any other fruit you like.
- 1 bottle of Rioja
- 1/4 cup Grand Marnier or Orange Curacoa
- 1/2 cup orange juice
