MIX YEAST AND WARM WATER TOGETHER
- 1 PKG YEAST
- 1 CUP WARM WATER
- 1 TSP SUGAR
- 1 TSP SALT
- 2 TBSP VEGETABLE OIL
- 2 1/2 CUPS FLOUR
BEAN SOUP

WARM OIL IN MEDIUM SKILLET OVER MEDIUM HEAT
- 2 TSP. OLIVE OIL
- 1 ONION , DICED
- 3 CLOVES GARLIC , CHOPPED
- 2 (15.5 OZ.) CANS BLACK BEANS (OR ANY KIND OF CANNED BEANS)
- 1 - 16 OZ. JAR SALSA
- 1 CUP LOW SODIUM CHICKEN BROTH
- 2 - 3 OZ. HOT ITALIAN SAUSAGE LINKS ( I USE CHORIZO)
- 1/2 CUP CILANTRO , CHOPPED
- SALT & PEPPER
Corn and Crab Chowder

Directions Heat a deep pot over moderate heat
- Toppings:
- 1 tablespoon vegetable oil or extra-virgin olive oil
- 2 tablespoons butter
- 2 all-purpose potatoes, peeled and diced
- 2 ribs celery, chopped
- 1 medium yellow onion, chopped
- 1 small red bell pepper, seeded and diced
- 1 bay leaf, fresh or dried
- Salt and freshly ground black pepper
- 1 tablespoon Old Bay seasoning blend,
- 3 tablespoons all-purpose flour
- 2 cups vegetable or chicken stock or broth
- 1 quart whole milk
- 3 cups corn kernels, scraped fresh from the cob or, frozen kernels
- 8 ounces cooked lump crab meat
- 4 small bread bowls, 6 inches, hollowed out, preferably sour dough
- Oyster crackers
- Hot cayenne pepper sauce
- Sliced scallions

POTATO LEEK SOUP

- 6 POTATOES, PEELED & SLICED
- 3 LEEKS SLICED UP TO GREEN PART
- 1 CLOVE GARLIC , SLICED
- CHICKEN STOCK
- SALT & PEPPER TO TASTE
- 2 TBSP BUTTER
- 1 CUP CREAM OR MILK
- CHIVES , CHOPPED

- 1 CHICKEN (3-4 LBS) CUT INTO SERVING PIECES
- SALT & PEPPER
- 2 TBSP BUTTER
- 1/4 CUP SHALLOTS, CHOPPED
- 1/2 CLOVE GARLIC, MINCED
- 1/2 CP DRY WHITE WINE
- 3/4 CUP TOMATOES, CHOPPED
- 1/2 CUP CHICKEN BROTH
- FRESH BASIL LEAVES
- 1 BAY LEAF
- 3 SPRIGS PARSLEY
Blueberry Cobbler

Heat oven to 350 degrees. Have ready a shallow 2 qt baking dish
- 1/3 cup sugar
- 2 Tbsp corn starch
- 3 pt blueberries
- 1 Tbsp fresh lemon juice
- 3/4 cup old fashioned or quick cooking oats
- 1/2 cup packed brown sugar
- 1/3 cup all purpose flour
- 1/2 tsp cinnamon
- 4 Tbsp cold butter , cut small
- Optional: serve with vanilla ice cream

CUT CHICKEN INTO EQUAL CUBED PIECES
- BONELESS SKINLESS CHICKEN BREASTS
- 1 CUP BUTTERMILK
- 2 CUPS ALL PURPOSE FLOUR
- 1 TBSP SALT
- 1 TBSP PEPPER
- 1 TBSP PAPRIKA
- 2 CUPS HOT SAUCE (MIGHT WANT TO START OFF WITH 1 1/4 CUP AND THEN TO TASTE)
- 1/4 CUP BUTTER
