A1 Sauce

1. Bring to a boil for 2 minutes stirring
- 1/2 1/2 1/2 Cup Orange Juice
- 1/2 1/2 1/2 Cup Raisins
- 1/4 1/4 1/4 Cup Soy Sauce
- 1/4 1/4 1/4 Cup White Vinegar
- 2 2 2 Tbsp Dijon mustard
- 1 1 1 Tbsp Bottled Grated Orange Peel
- 2 2 2 Tbsp Heinz Ketchup
- 2 2 2 Tbsp Heinz Chili Sauce
Buffalo Chicken Wings

Melt margarine in sauce pan until barely liquid
- 2 2 2 lbs. chicken wings (disjointed − discard the tips)
- 1/4 1/4 1/4 Lb. Margarine (do not use butter!)
- 8 8 8 Oz. "Frank's" Hot Sauce (also labeled as Durkee Hot Sauce. (NO SUBSTITUTIONS!!!)
- Oil for frying
Beef Jerky

To aid in slicing meat thinly, freeze the meat slightly until ice crystals are formed
- 1/2 1/2 1/2 cup dark soy sauce
- 2 2 2 Tbs Worcestershire sauce
- 1 1 1 tsp monosodium glutamate (optional)
- 1 1 1 tsp onion powder
- 1 1 1 tsp garlic powder
- 1/4 1/4 1/4 tsp powdered ginger
- 2 2 2 Tbls. freshly ground black pepper
- 1/2 1/2 1/2 tsp Tabasco
- 1/2 1/2 1/2 tsp liquid smoke seasoning
- 2 2 1/4 lbs lean beef brisket, eye−of−round or flank steak, trimmed completely of fat and cut across grain into slices 1/4 inch thick
Old Fashioned Apple Pie

Laying a slice of cheddar cheese atop a wedge of warm apple pie is an American tradition
- For the filling:
- 1 tsp. salt
- 2 Tbs. sugar
- 10 Tbs. (1 1/4 sticks) cold unsalted butter,
- cut into pieces
- 10 Tbs. cold vegetable shortening, cut into
- pieces
- 7 Tbs. ice water
- 1 tsp. distilled white vinegar
- 2 1/2 lb. baking apples, peeled, cored,
- quartered and cut lengthwise into slices 1/2
- inch thick
- 1/2 cup sugar, plus more as needed
- 1/2 tsp. ground cinnamon
- 1/4 tsp. freshly grated nutmeg
- 1 Tbs. fresh lemon juice
- 2 Tbs. unsalted butter, cut into pieces
- 1 egg yolk
- 1 Tbs. heavy cream
Big Boy's Blue Cheese Dressing

Use electric mixer to combine all ingredients until smooth
- 1/2 cup Sour cream
- 1/2 cup Milk
- 1 cup Kraft mayo
- 4 ounces Blue cheese, crumbled
- 1/8 teaspoon Onion powder

•In a small bowl, combine flour, almonds and sugar; cut in butter until crumbly
- FILLING:
- 1 cup all-purpose flour
- 1/2 cup ground almonds
- 1/4 cup sugar
- 1/2 cup cold butter
- 1/4 teaspoon almond extract
- 1 package (8 ounces) cream cheese, softened
- 1/4 cup sugar
- 1/4 teaspoon cream of tartar
- 1 egg, lightly beaten
- TOPPING:
- 1/3 cup packed brown sugar
- 1 tablespoon all-purpose flour
- 1 teaspoon ground cinnamon
- 4 cups thinly sliced peeled tart apples
- 1/3 cup slivered almonds
Crab Bisque

- 1 Tbs. unsalted butter
- 1 Tbs. canola or grapeseed oil
- 3 large shallots, minced
- 5 cups fish or chicken stock
- 2 cups heavy cream
- Kosher salt and freshly ground white pepper,
- to taste
- 3 ⁄4 to 1 lb. fresh or thawed frozen lump
- crabmeat, picked over for shell fragments
- (3 to 4 cups)
- 1 ⁄2 cup dry sherry, dry Marsala or Madeira
- Minced fresh tarragon or flat-leaf parsley
