Spicy Seafood and Sausage Gumbo

Indispensable to a good gumbo, okra are slender, ridged green seedpods with pointed ends
- 1 large yellow onion
- 1 green bell pepper
- 1 red bell pepper
- 1/2 lb. okra
- 1/2 cup canola or vegetable oil
- 6 Tbs. all-purpose flour
- 3 garlic cloves, minced
- 1 can (14.5 oz.) diced tomatoes with juices
- 5 cups fish stock or bottled clam juice
- 2 bay leaves
- 2 1/2 Tbs. Creole seasoning blend
- Salt and freshly ground pepper, to taste
- 1/2 lb. andouille sausage, cut into 1-inch
- slices
- 1 lb. large shrimp, peeled and deveined
- 1 cup fresh-cooked crabmeat, picked over
- to remove any shell fragments
- 1 tsp. filé powder
- Cooked white rice for serving
- 2 Tbs. finely chopped fresh flat-leaf parsley
Buffalo Chicken Wings

Melt margarine in sauce pan until barely liquid
- 2 lbs. chicken wings (disjointed − discard the tips)
- 1/4 Lb. Margarine (do not use butter!)
- 8 Oz. "Frank's" Hot Sauce (also labeled as
- Durkee Hot Sauce. NO SUBSTITUTIONS!!!)
- Oil for frying
Linguine With Shrimp

- 2 lemons
- 1 cup heavy cream
- 1 lb. small shrimp, peeled and deveined
- 1 Tbs. minced fresh chives
- 2 Tbs. salt, plus more, to taste
- 1 lb. linguine or fettuccine
- 1 Tbs. olive oil
- Freshly ground white pepper, to taste
Easy Cherry-Almond Coffee Cake

- 1 can (12.4 oz) Pillsbury® refrigerated cinnamon rolls with icing
- 1 cup cherry pie filling (from 21-oz can)

Barbecued Sage Spareribs

- 6 pounds country-style pork spareribs
- 1 medium onion, chopped
- 2 to 3 garlic cloves, minced
- 2 tablespoons mixed pickling spices
- 1 tablespoon minced fresh sage or 1 teaspoon rubbed sage
- 1/2 teaspoon hot pepper sauce
- 3 cups barbecue sauce
Tiny Cherry Cheesecakes

•In a small bowl, combine flour, sugar and cocoa; cut in butter until crumbly
- FILLING:
- 1 cup all-purpose flour
- 1/3 cup sugar
- 1/4 cup baking cocoa
- 1/2 cup cold butter
- 2 tablespoons cold water
- 2 packages (3 ounces each) cream cheese, softened
- 1/4 cup sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1 egg, lightly beaten
- 1 can (21 ounces) cherry or strawberry pie filling

- 1/4 cup butter, softened
- 1/2 cup sugar
- 1 egg
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon lemon extract
- 1-1/4 cups all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup sugar
- 2 teaspoons cornstarch
- 1/4 cup water
- 1/4 cup orange juice
- TOPPING:
- 4 ounces cream cheese, softened
- 1/4 cup confectioners' sugar
- 1 cup whipped topping
- 1 firm banana, sliced
- 1 cup sliced fresh strawberries
- 1 can (8 ounces) mandarin oranges, drained
- 2 kiwifruit, peeled and thinly sliced
- 1/3 cup fresh blueberries
