Risotto with Spring Vegetables

From The Ultimate Pressure Cooker Cookbook by Tom Lacalamita This vegetable packed risotto is a delicious lunch
- 2 T. olive oil
- 1 clove garlic, peeled and minced
- 1/2 cup shelled fresh or frozen peas
- 1/4 lb. asparagus spears, trimmed and cut into 1” lengths
- 1 small zucchini, trimmed and cut into 1/4” dice
- 2 vine ripened plum tomatoes, peeled, seeded and finely chopped or 2 canned plum tomatoes, seeded and finely chopped
- 2 1/2 cups chicken or vegetable stock
- 2 T. minced parsley
- 3 T. unsalted butter
- 1 small onion, finely chopped
- 1 cup Italian Arborio or other short-grain rice
- 1/4 cup dry white wine
- 1/3 cup freshly grated Parmesan cheese
- 1/8 tsp. freshly ground black pepper
