  • 1 clove garlic, peeled and minced
  • 1/2 cup shelled fresh or frozen peas
  • 1/4 lb. asparagus spears, trimmed and cut into 1” lengths
  • 1 small zucchini, trimmed and cut into 1/4” dice
  • 2 vine ripened plum tomatoes, peeled, seeded and finely chopped or 2 canned plum tomatoes, seeded and finely chopped
  • 2 1/2 cups chicken or vegetable stock
  • 2 T. minced parsley
  • 3 T. unsalted butter
  • 1 small onion, finely chopped
  • 1 cup Italian Arborio or other short-grain rice
  • 1/4 cup dry white wine
  • 1/3 cup freshly grated Parmesan cheese
  • 1/8 tsp. freshly ground black pepper
