- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp salt
- 1/2 cup vegetable oil
- 1 1/4 cups sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup canned pumpkin
- Cream Cheese Frosting:
- 3 cups confectioner’s sugar
- 1 8oz package cream cheese
- 4 T butter
- 1 tsp lemon juice
- Yellow and red food coloring
- Pretzel nuggets (stems)

- CUPCAKES
- 1 package yellow cake mix
- 1 cup sour cream
- 3 eggs
- 1/3 cup butter, melted (5 1/3 Tbsp.)
- 1/4 cup milk
- 1 cup jelly or 1 cup jam, your favorite flavor
- FROSTING
- 1 cup butter, softened
- 4 ounces cream cheese, softened
- 1/2 cup creamy peanut butter
- 1 (16 ounce) boxes powdered sugar
- peanut butter chips or chocolate chips or Reese's pieces, for garnish

- 3/4 cup ( 1 1/2 sticks) butter
- 1 1/2 cups granulated sugar
- 3 eggs
- 1 1/2 teaspoons pure vanilla extract
- 1/2 teaspoon mint extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda

Bread and Cheese Pancake

- 2 cups cubed white or whole wheat bread with crusts removed
- 2 large eggs
- 1/2 cup milk
- 1 oz Cheddar or Gouda cheese, diced (1/4 cup)
- 1 T freshly grated Parmesan cheese, or a generous pinch of salt
- 2 tsp butter

Homemade Bailey’s Irish Cream

Combine all ingredients in a blender and set on high speed for 30 seconds
- 1 cup light cream ( or heavy whipping cream for a richer drink)
- 14 oz sweetened condensed milk
- 1 2/3 cups Irish Whiskey (author used Jameson’s)
- 1 tsp instant coffee
- 2 T Hershey’s chocolate syrup (author used Torani)
- 1 tsp vanilla
- 1 tsp almond extract (author did not use)
