- For the cake you will need:
- 2 cups unbleached all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, at room temperature
- 1/2 cup sugar
- 2 eggs
- 1 cup plain or vanilla yogurt (light or regular)
- 2 large golden delicious apples, peeled, and sliced OR
- 2 large peaches, peeled, pitted and sliced OR
- 2 Bartlett pears, peeled, cored and sliced
- For the streusel topping you will need:
- 1/2 cup sugar
- 2 tablespoons melted butter
- 2 tablespoons flour
- 1 1/2 teaspoons ground cinnamon
- 1/2 cup chopped pecans or walnuts
