- SIMMERING SAUCE:
- 4 flounder (meita-karei), abt 6" each
- 7/8 cup water
- 1 tablespoon sugar
- 4 tablespoons sweetened cooking sake (mirin)
- 1/4 cup Japanese rice wine (sake)
- 4 tablespoons soy sauce (shoyu)

In boiling water, blanch the asparagus for 1 minute and the green beans and peas for 2 minutes
- 1/2 pound medium-sized asparagus tips only
- 1 cup green beans cut 1" lengths
- 1 cup fresh green peas
- 1 hothouse cucumber peeled
- 4 flounder fillets - (abt 6 oz ea)
- 4 tablespoons unsalted butter
- 4 teaspoons chopped fresh dill
- Salt to taste
- Freshly-ground black pepper to taste
