Preheat the oven to 300 degrees F
- 1 pound dried navy beans, picked over and soaked overnight in water to cover
- 1 1/4 teaspoons cayenne pepper
- 1 teaspoon salt
- 2 bay leaves
- 2 tablespoons olive oil
- 1/2 pound salt pork, trimmed and cubed
- 4 ounces chopped bacon
- 1 1/2 cups ketchup
- 1 1/2 cups reserved bean liquid
- 1 cup chopped onions
- 1/2 cup chopped celery
- 1/2 cup firmly packed dark brown sugar
- 1 tablespoon dry (powdered) mustard
- 1 tablespoon chopped garlic
- 1 teaspoon freshly ground black pepper
Shrimp Scampi with Linguini

For the pasta, put a large pot of water on the stove to boil
- 1 pound linguini
- 4 tablespoons butter
- 4 tablespoons extra-virgin olive oil, plus more for drizzling
- 2 shallots, finely diced
- 2 cloves garlic, minced
- Pinch red pepper flakes, optional
- 1 pound shrimp, peeled and deveined
- Kosher salt and freshly ground black pepper
- 1/2 cup dry white wine
- Juice of 1 lemon
- 1/4 cup finely chopped parsley leaves

Cut cabbage halves in half and thinly slice
- 1 •1 medium cabbage (about 1 1/2 pounds), halved and cored

- 3/4 •3/4 cup mayonnaise
- 1/2 •1/2 cup sour cream
- 2 •2 tablespoons cider vinegar
- 1 •1 tablespoon granular sugar substitute
- 1 •1 teaspoon celery seed

El Cid Chili

Place oil in a large, heavy pot over medium heat
- 2 tablespoons olive oil
- 2 pounds sirloin steak, cut into 1-inch cubes
- 1/2 pound ground beef
- 12 ounces sausage, casing removed, cut into 1/2 cubes
- 1 large yellow onion, coarsely chopped
- 1/4 cup chili powder
- 1 tablespoon garlic salt
- 2 teaspoons cumin
- 1 teaspoon dried basil
- 2 (14.5-ounce) cans beef broth
- 2 (14.5-ounce) cans whole tomatoes, drained
- 1 small can tomato sauce
- 1 small can tomato paste
- 3 bay leaves
- 2 green jalapenos, slit lengthwise 3 times each
- 1 tablespoon yellow cornmeal
- Salt and pepper, to taste
- Garnish with Cheddar and sour cream, if desired.

- 1/2 teaspoon ground cinnamon
- 1 stick unsalted butter, melted
