(6 ounce) halibut or other firm white fish fillets
Salt and freshly ground pepper, to taste
tablespoon grated lemon rind
tablespoon fresh lemon juice
cup prepared basil pesto
Prepare grill. Place fillets on grill rack coated with cooking spray. Sprinkle salt and pepper over fish. Cover and grill 4 minutes on each side or until fish flakes easily when tested with a fork. Serve immediately with Lemon-Basil Pesto and Grilled Zucchini and Bell Pepper with Corn.
