Roasted Onion and Bacon Dip

1. Adjust oven rack to lowest position and heat oven to 400 degrees
- Roasted Onions
- 6 medium yellow onions halved crosswise, root and stem ends X'd twice (see illustration below)
- 1 tablespoon olive oil
- Dip
- 6 - 8 slices bacon, cooked crisp and drained, crumbled
- 2 cups sour cream
- 2 1/4 teaspoons Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1/2 teaspoon celery seed
- 3 tablespoons chopped fresh chives
- 1/2 teaspoon table salt
- Ground black pepper
Fluffy Peanut Butter Frosting

Place the butter and peanut butter into a medium bowl and beat with an electric mixer
- 1/2 cup butter, softened
- 1 cup creamy peanut butter
- 3 tablespoons milk, or as needed
- 2 cups confectioners' sugar

- 3/4 cup Unsalted Butter
- 1 1/2 cups Sugar
- 1 tsp Vanilla
- 3 large Eggs, room temperature
- 1 1/4 cups Buttermilk
- Frosting
- Scant 1/2 cup Flour
- 1 1/2 cups Milk
- 2 tsp Vanilla
- 1 1/2 cups (3 sticks) Butter, softened
- 1 1/2 cups Granulated Sugar
- 25-30 oreos
Macaroni Salad

Amish/PA dutch style Macaroni salad
- Salad:
- 1 1/2 lb. macaroni, cooked
- 1 Carrot, grated
- 1 onion chopped, fine
- 2 hard boiled eggs, chopped
- Dressing:
- 1/4 cup Vinegar
- 1 1/4 teaspoon mustard
- 3/4 cup sugar
Black Bean Burgers

In a food processor, combine beans, panko, green onion, chili powder, cumin and salt
- 2 – 15 oz cans black beans, drain and rinse
- 1 1/2 c panko bread crumbs
- 1/4 c minced green onion
- (1 t chili powder, 1 t cumin, 1/2 t salt, 1 T veg oil)
- 6 toasted hamburger buns
- Shredded lettuce, sliced tomato
