- 1/2 teaspoon chili powder

Asian Edamame Fried Rice

Whisk eggs and egg whites, season with salt and pepper
- 3 cups leftover cooked brown rice
- 2 egg whites, scrambled
- 1 whole egg, scrambled
- 1 tbsp Smart Balance oil
- 1/2 onion, chopped
- 2 cloves garlic, diced
- 5 scallions, chopped, whites and greens separated
- 1/2 cup shredded carrots
- cooking spray
- 1 cup ready-to-eat shelled edamame
- 2 tbsp low sodium soy sauce, tamari for gluten free (or more to taste)
- salt and fresh pepper to taste
Peanut Butter Oatmeal Energy Bites

Instructions Combine all ingredients in a large bowl
- 1 cup oats
- 2/3 cup toasted shredded coconut
- 1/2 cup peanut butter
- 1/2 cup mini chocolate chips
- 1/3 cup honey
- 1 Tbsp. chia seeds

Creamy Butternut Squash Pasta

1. Bring a large pot of water to a boil
- 1 medium butternut squash, peeled and diced
- 3 tablespoons olive oil
- 8 sage leaves
- 12 ounces DeLallo whole wheat linguine (or other pasta)
- 1 1/2 cups water or vegetable broth
- 1 tablespoon olive oil
- 1/4 cup diced yellow onion
- 2 cloves garlic, minced
- 1/8 teaspoon ground nutmeg
- 1/4 cup freshly grated parmesan cheese
- Salt and freshly ground black pepper, to taste
Slow Cooker Butternut Squash Soup with Maple Roasted Chickpeas

1. Add the onion, carrots, butternut squash, and apple to the slow cooker
- For the Butternut Squash Soup:
- 1 medium yellow onion, chopped
- 3 medium carrots, peeled and chopped
- 1 medium butternut squash, peeled, seeded and chopped into 1-inch cubes (about 5 cups)
- 1 large apple, peeled and chopped (I used Granny Smith)
- 2 (14 oz) cans low sodium vegetable broth
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 tablespoons maple syrup
- Salt and freshly ground black pepper, to taste
- For the Maple Roasted Chickpeas:
- 1 (15 oz) can Libby's Organic Garbanzo Beans (chickpeas)
- 1 tablespoon canola oil
- 1 1/2 tablespoons pure maple syrup
- 1 tablespoon brown sugar
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon salt

- 1 teaspoon Italian Seasoning Mix
- 1 cup (4 ounces) shredded mozzarella cheese

- 1 can (8 ounces) pizza sauce
- 1/4 cup diced green bell pepper, sliced green onions or chopped pitted ripe olives
