Ginger Chicken

1. In a large resealable plastic bag, combine the egg white, soy sauce, corn starch and pepper
- Sauce:
- 1 egg white, beaten
- 1 Tablespoon soy sauce
- 1 teaspoon cornstarch
- 1/8 teaspoon white pepper
- 1 lb. boneless skinless chicken breasts, cut into 1 inch pieces
- 1/2 teaspoon cornstarch
- 2 Tablespoon rice vinegar
- 2 Tablespoon soy sauce
- 1 teaspoon sugar
- Stirfry:
- 1 Tablespoon , plus 2 teaspoon peanut oil, divided
- 1 medium green pepper, julienned
- 3 green onions, cut into 1 inch lengths
- 1/2 cup canned bamboo shoots, finely chopped
- 2 to 3 teaspoon minced fresh gingerroot
- 1/4 cup slivered almonds, toasted
- Hot cooked rice, optional
Coconut and Beef Curry with Noodles

1. Bring a large pot of water to a boil, add a generous amount of salt

- 8 ozs vermicelli (rice noodles) or angel hair pasta
- 2 Tbsp veg oil
- 1 lb beef sirloin, cut into thin 2-inch-long strips
- 1 red onion, halved lengthwise and thinly sliced
- 2 red bell peppers, ribs and seeds removed, thinly sliced lengthwise
- 1/4 cup water
- 1 Tbsp thai red curry paste
- 1 can (14oz) coconut milk *unsweetened)
- 1 cup packed fresh basil leaves
- 1 Tbsp fresh lime juice
Honey Lime Red Snapper

- 3/4 cup key lime juice (or regular lime juice)
- 1/2 cup honey
- 4 red snapper fillets (6 oz each)

Chicken with peppers and onions in red sauce
- 2 lbs chicken pieces
- salt and pepper
- oregano
- 2 tablespoons olive oil
- 2 green bell peppers, cut into narrow strips
- 1 large onion, thinly sliced
- 8 ounces mushrooms, trimmed and quartered
- 2 garlic cloves, finely chopped
- 2 cans chopped italian peeled tomatoes, drained (or one 28 oz can)
Greek Stewed Chicken

Preboil water with sea salt
- 1 chicken (2 1/2 to 3 pounds), cut into 8 pieces (legs, breast and thighs)
- 1 tsp. ground cinnamon
- 2 tsp. kosher salt
- 1 tsp. freshly ground black pepper
- 5 cloves garlic , peeled and minced
- 2 Tbsp. extra-virgin olive oil
- 1 large yellow onion , peeled and coarsely chopped
- 2 cups water
- 1 can (6 ounces) tomato paste
- 1 Tbsp. dried Italian herb seasoning
- 1 cup orzo , cooked according to package directions
- 1/2 cup grated Parmesan cheese

1 Chicken Breasts: Season both sides of chicken breasts with salt and black pepper
- 4 (4 ounce) chicken breasts
- salt and black pepper (To Taste)
- 1 lb angel hair pasta
- 6 -8 medium size roma tomatoes
- 4 tablespoons olive oil, divided
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 minced garlic cloves
- 10 fresh basil leaves
- 2 garlic cloves, sliced into thin coins
- 1/2 cup tomato sauce
- 1 cup balsamic vinegar
- 1 tablespoon granulated sugar

Slow Cooker
- 1 lb boneless chuck roast, trimmed and cut into bite sized pieces
- 3 medium carrots, cut into 1/2 inch thick slices
- 2 small potatoes, peeled and cut into 1/2 inch cubes
- 1 medium onion, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon dried thyme
- 1 bay leaf
- 2 14-1/2 ounce cans diced tomatoes (do not drain)
- 1 cup water
- 1/2 cup loose-pack frozen peas

Heat large covered saucepot of water to boiling on high
- 2 leeks
- 1 Tbsp extra virgin olive oil
- 1 lb. thin asparagus
- 1 pkg (12 oz) whole grain-spaghetti
- 1 c. frozen peas
- 1 pt. grape tomatoes, cut in half
- 1/4 c. packed fresh flat-lear parsley leaves, finely chopped
- 1/4 c. freshly grated Parmesan cheese

1.Bring 1 inch of water to a boil in a large saucepan
- 2 pounds asparagus, tough ends trimmed, cut into 1-inch pieces
- 2 tablespoons chili powder
- 1/2 teaspoon garlic, powder
- 1/2 teaspoon salt, divided
- 1 pound tilapia, Pacific sole or other firm white fish fillets
- 2 tablespoons extra-virgin olive oil
- 3 tablespoons lemon juice

- 2 cups uncooked jasmine rice
- 1 quart water
- 3/4 cup coconut milk
- 3 tablespoons soy sauce
- 3 tablespoons rice wine vinegar
- 1 1/2 tablespoons fish sauce
- 3/4 teaspoon red pepper flakes
- 1 tablespoon olive oil
- 1 medium onion, sliced
