Caramel-Pecan-Pumpkin Bread Puddings are a great way to use the delicious, seasonal flavor of pumpkin
- BREAD PUDDINGS:
- 4 large eggs
- 2 (15-oz.) cans pumpkin
- 1 1/2 cups milk
- 1 cup half-and-half
- 1 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon vanilla extract
- 1 (12-oz.) French bread loaf, cut into 1-inch pieces (about 10 cups)
- CARAMEL-PECAN SAUCE:
- 1 cup pecans, chopped
- 1 cup firmly packed light brown sugar
- 1/2 cup butter
- 1 tablespoon light corn syrup
- 1 teaspoon vanilla extract
Chocolate Custard with Butterscotch Whipped Cream

- 1 cup (6-ounces) semisweet chocolate chips
- 1 cup heavy cream
- 1 cup milk
- 4 egg yolks
- 3 tablespoons sugar
- Pinch salt
- Butterscotch Whipped Cream:
- 1 cup heavy cream
- 5 tablespoons butterscotch sundae syrup

- 1/2 cup light sour cream
- 3 tablespoons reduced-fat mayonnaise
- 1 1/2 tablespoons white balsamic vinegar
- 1 teaspoon sugar
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 2 cups unpeeled chopped Rome apple (about 1 medium)
- 1 cup golden raisins
- 1 (16-ounce) package cabbage-and-carrot coleslaw
East Hampton Clam Chowder

Melt 4 tablespoons (1/2 stick) of the butter in a large heavy-bottomed stockpot
- 12 tablespoons (1 1/2 sticks) unsalted butter, divided
- 2 cups chopped yellow onions (2 onions)
- 2 cups medium-diced celery (4 stalks)
- 2 cups medium-diced carrots (6 carrots)
- 4 cups peeled medium-diced boiling potatoes (8 potatoes)
- 1 1/2 teaspoons minced fresh thyme leaves (1/2 teaspoon dried)
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 quart (4 cups) clam juice
- 1/2 cup all-purpose flour
- 2 cups milk
- 3 cups chopped fresh chowder clams (1 1/2 pounds shucked clams)
