Bread Pudding - Chocolate Diablo Bread Pudding

Soak the dried chiles in warm water until soft, about 30 minutes
- 3 pasilla chiles (substitute chile negro)
- 3 cups milk
- 6 oz. semisweet chocolate, chopped
- 5 eggs
- 1 1/2 tea. cinnamon
- 2 Tbsp. vanilla
- 1/4 cup dried cherries
- 6 oz. French bread, cut into cubes
- 1 cup chopped walnuts
- 3 Tbsp. butter, cut into 1/4" pieces
French Toast - Quick Blueberry

Beat cream cheese, 2 Tbsp
- 1 pkg. cram cheese, softened
- 1/4 cup maple syrup, divided
- 2 Tbsp. blueberry preserves
- 16 slices french bread (1/2" thick)
- 2 eggs
- 1 cup 2% milk
- 2 Tbsp. flour
- 2 tea. vanilla
- 1/4 tea. salt
- SAUCE
- 1 cup sugar
- 1 cup water
- 2 Tbsp. cornstarch
- 1 cup fresh blueberries or frozen unsweetened blueberries
- 1 Tbsp. butter
Salted Caramel Hot Chocolate

Warm Dulce de Leche in small pot; whisk in milk, cocoa and salt
- 4 Tbsp. store-bought Dulce de Leche
- 1 1/4 cups milk
- 2 Tbsp. unsweetened cocoa powder
- 1/4 tea. coarse sea salt
Chicken and Orzo Salad

Prepare orzo according to package directions, drain
- 1 (16 oz) package orzo
- 1 cup light olive oil and vinegar dressing
- 3 Tbsp. reduced-fat pesto with basil (Buitoni)
- 2 cups shredded cooked chicken
- 1 pint cherry tomatoes
- 1 (8 oz) block feta cheese, cubed
- 1 (6 oz) bag fresh baby spinach
- 1 (4 oz) jar pitted kalamata olives, drained

Made wtih coconut milk. Used any dried fruit - raisins, cranberries, cherries, apricots, etc
- 1 baguette, cut into 1" cubes (any cubed bread, day old, stale)
- 3 eggs
- 1 can coconut milk
- 3 cups whole milk
- 1/2 tea. salt
- 1/2 tea. cinnamon
- 1/2 tea. cardamon
- 1/2 tea. ginger
- 1 cup sugar
- dried fruit
- nuts
Chorizo Joes

In a large skillet, cook beef and chorizo together, breaking up the meat with a wooden spoon
- 1 lb. ground chuck
- 12 oz. Mexican pork chorizo
- 1 1/2 cup diced onion (about 1 large)
- 1 cup BBQ sauce
- 1/2 cup water
- salt and pepper to taste
- Red wine vinegar to taste
- Hamburger buns
Dessert - Grilled Peaches with Raspberry Sauce

Puree 2 1/4 cups fresh raspberries along with 3 tablespoons water in food processor until puree is smooth
- 2 1/4 * 2 1/4 cups (lightly packed) fresh raspberries (about 13 ounces)
- 3 * 3 tablespoons water
- 3 * 3 tablespoons sugar
- 1 * 1 tablespoon fresh lemon juice
- 3 * 3 tablespoons unsalted butter
- 1 1/2 * 1 1/2 tablespoons (packed) dark brown sugar
- 6 * 6 medium-size ripe but firm peaches, halved, pitted
Pork Loin - Chile Brined Roasted Pork Loin

Combine first 5 ingredients in a small saucepan
- 1 cup water
- 2 Tbsp. cumin seeds
- 2 Tbsp. grated lime rind
- 1 Tbsp. Mexican oregano
- 6 garlic cloves, minced
- 6 cups water
- 1/2 cup salt
- 1/2 cup sugar
- 1 (7 oz) can chipotle chiles in adobo sauce, chopped
- 2 cups ice cubes
- 1 (3 lb) boneless pork loin, trimmed
- 1/4 cup fresh lime juice
- 2 tea. pepper
- 1 tea. Mexican oregano
- 2 garlic cloves, minced

Pork Loin - Cranberry - Mustard Pork Loin

Place roast in a 3 qt. slow cooker
- 1 boneless whole pork loin (2#)
- 1 can (16 oz) whole-berry cranhgerry sauce
- 1/4 cup Dijon mustard
- 3 Tbsp. brown sugar
- 2 Tbsp. lemon juice
- 1 Tbsp. cornstarch
- 1/4 cup cold water
Creamy Tomato Basil Soup

In a large saucepan, saute onion and garlic in oil until tender
- 2 Tbsp. chopped green onion
- 2 garlic cloves, minced
- 1 1/2 tea. olive oil
- 1 can (28 oz) crushed tomatoes
- 1 can (10 1/2 oz) condensed chicken broth, undiluted
- 1 1/2 cups water
- 1/4 5ea. pepper
- 3/4 cup heavy whipping cream
- 2 Tbsp. sherry or additional chicken broth
- 2 Tbsp. minced fresh basil
- 2 tea. sugar
