Chicken with Artichokes and Lemon

Sprinkle chicken with salt and pepper and dredge in flour
- 1 1/2 lb. boneles, skinless chicken thighs, patted dry
- salt and pepper
- 1/4 cup flour
- 2 Tbp. vegetable oil
- 1 cup white wine
- 1 12-oz. jar artichoke hearts, drained, coarsely chopped
- 1 lemon, thinly sliced
- 1 tea. finely chopped fresh thyme
Halibut - Lemon & Wine Fish in foil packets

Heat grill. Cut dix 10" squares of heavy-duty foil
- 2 lemons, divided
- 6 halibut steaks or tilapia fillets (about 1 1/2#)
- 2 Tbp. olive oil
- 2 Tbsp. white wine
- 2 cloves garlic, peeled and minced
- 1/4 cup chopped scallions
- 2 Tbsp. chopped fresh parsley
Acorn squash - Apple Fall Squash

Preheat oven to 3560 degrees
- 3 acorn squashes
- 12 oz. bulk pork sausage
- 1/4 cup chopped onion
- 1 1.2 cups golden delicious apples, cored and chopped
- 1/4 tea. ground sage
- 1/4 tea. thyme
- 1/8 tea. pepper
- 1/8 tea. salt
- 1/2 cup chopped pecans
Poppers - with shredded meat

Cut peppers lengthwise, remove seed and veins, and wash
- 12 jalapenos
- 1 cup cream cheese
- 1/2 cup Parmesan cheese
- 1 cup leftover brisket, pork or steak, cut up or shredded
- st3ak seasoning, to taste
- 1 lb. pre-cooked bacon
Rhubarb Peach Crisp

In a large bowl, combine the sugar, flour, nutmeg, lemon peel, salt, rhubarb and peaches
- Ingredients:
- 3/4 cup sugar
- 3 tablespoons all-purpose flour
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon grated lemon peel
- 1/8 teaspoon salt
- 3 cups sliced fresh or frozen rhubarb
- 2-1/2 cups chopped peeled fresh peaches or frozen unsweetened sliced peaches, thawed and chopped
- TOPPING:
- 1/2 cup all-purpose flour
- 1/2 cup old-fashioned oats
- 1/2 cup packed brown sugar
- 3/4 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 4 tablespoons cold butter
Dip - Swiss Cheese Dip

1. Preheat oven to 350 degrees
- 2 cups of grated swiss cheese
- 1 pack Ready Crisp Bacon
- 1 cup of green onion (chopped)
- 1/2 cup of mayo
- 1 package (8oz) of cream cheese
- 1/4 box of wheat thins
Pastrami Cuban

Just like a cuban but with pastrami and pork
- Pastrami
- Roast pork
- Swiss cheese
- pickles
- Dijon mustard
Honey Mustard Kielbasa and Potatoes

Heat oven to 400 degrees. Mix first 3 ingredients until well blended
- 3/4 cup dray white wine (or beer)
- 1/4 cup Grey Poupon Savory Honey Mustard
- 2 Tbspo. brown sugar
- 1 lb. kielbasa, cut into 1" pieces
- 1 1/4 lbs. red potatoes (about 4) cut into 3/4" pieces
- 1 large onion, sliced
Salsa - Roasted Pepper Salsa

Preheat oven to425 degrees
- 4 red jalapenos, halved and seeded
- 3 poblano peppers, halved and seeded
- 1 (28 oz) can diced tomatoes
- 1 (10 oz) can diced tomatoes with green chiles
- 1 cup packed fresh cilantro leaves
- 2 cloves garlic, minced
- 1/2 cup chopped onion
- 2 Tbsp. fresh lime juice
- 1 tea. salt
Cheddar Cheese Loaves

Preheat oven to 400 degrees
- 3 1/2 cups flour
- 1 12/4 tea. salt
- 1 tea. baking soda
- 3 Tbsp. butter, softened
- 4 oz. sharp orange cheddar, coarsely shredded
- 1 3/4 cup buttermilk
