Rice Cooked with Ancho Chili

Put the rice in a bowl and cover with hot water for 5 minutes
- 3/4 cup long-grain white rice
- 2 ancho chilies, seeds and ribs removed
- 1 cup water or chicken broth
- 3 Tbsp. vegetable oil
- 1/4 cup finely chopped white onion
- salt, to taste
Tuna - Southwest Chile Lime Albacore Pasta

Prepare pastsa according to package directions
- 8 oz., dry gemelli pastas (twists)
- 1/4 cup chopped fresh cilantro, plus more for garnish
- 1 garlic clove, minced
- 3 Tbsp. extra virgin olive oil, divided
- 1/2 cup chicken broth
- 2 Tbsp. tequila (optional)
- 1/4 cup lime juice
- 1 Tbsp. taco seasoning or chili seasoning
- 1 1/2 cups half-and-half
- 1 Tbsp. grated parmesan cheese, plus more for garnish
- 1 cup canned corn, drained
- 1/32 medium red bell pepper, julienne sliced
- 1/2 medium red onion, sliced
- 1 large anaheim chile, seeded and chopped
- 2 - 7 oz. Kirkland solid white albacore tuna, drained and flaked
- salt and pepper
- crushed red pepper, for garnish
Squash - Balsamic-Honey Roasted Butternut Squash

Heat oven to 425 degrees. Line a baking sheet with nonstick foil
- 20 oz. pkg. peeled butternut squash chunks, cut into 1" pieces
- 1 Tbsp. honey
- 1 Tbsp. olive oil
- 1 Tbsp. balsamic vinegar
- 1/2 tea. salt
- 1/4 tea. pepper
Quick & Easy Bow Tie Pasta Salad

Cook pasta, and drain. Rinse with cold water and drain again
- 2 (12 oz) boxes bow-tie pasta
- 2 pints grape tomatoes, halved
- 2 (5 oz) bages pepperoni minis (Hormel)
- 1 (8 oz) package Colby and monterey Jack cheese cubes
- 1 (16 oz) bottle zesty Italian dressing
- 1/4 cup chopped fresh parsley
Honey-Soy Braised Pork Shoulder

In a small bowl, whisk together soy sauce, honey, chili-garlic sauce and ginger until well combined
- 1/2 cup soy sauce
- 1/2 cup honey
- 1/4 cup chili-garlic sauce (such as Sriracha)
- 2 Tbsp. finely chopped fresh ginger
- 1 - 4 lb. pork shoulder, trimmed and cut into 2" pieces
- 1 1/2 Tbsp. cornstarch
- salt and pepper
- cooked rice, optional
Chicken and Pepper Stew with olives

Combine flour, paprika, 1/2 tea
- 1/2 cup flour
- 1 tea. paprika, preferrably smoked
- salt and pepper
- 16 boneless, skinless chicken thighs (6#) cut into pieces
- 3 Tbsp. oil
- 3 red bell peppers, sliced
- 3 green bell peppers, sliced
- 4 cloves garlic, smashed
- 2 cups chicken broth
- 2 cups pitted klamata olives
- 1/2 cup golden raisins
- 2 cups long grain white rice, cooked
Mini Frittatas - Green Chile aned Pasta (in regular size muffin pan)

- 3 cups just-cooked macaroni noodles (about 1/4 of an 8 oz. pkg), drained
- 3/4 cup half and half
- 12 oz. pepper jack cheese, shredded
- 6 eggs
- 1 (4/5 oz) can chopped green chiles
- 3/4 cup chopped ham steak
- 2 green onions, both green adn white parts, chopped
- 1/4 tea. salt
- 1/4 tea. pepper
Apple Pie Liquor

Add all ingredients except Everclear
- 1 gallon apple cider
- 1 1/2 cups honey
- 1 tea. cloves
- 10-15 cinnamon sticks
- 1 - 750 ml bottle Everclear (190 proof) or highest you can get
Dip - SouthWest Hot Chip Dip - Crock Pot

Combined ground beef, beans, tomatoes, and taco seasoning in slow cooker
- 1 lb. ground beef, browned, crumbled fine, and drained
- 2 - 15 oz. cans refried beans
- 2 - 10 oz. cands diced tomatoes and chilies
- 1 pkg. taco seasoning
- 1 lb. Velveeta cheese, cubed
- tortilla chips
Mustard Pork Chops (or Chicken Breasts)

- 4 center-cut loin chops
- salt and pepper
- 2 tablespoons butter
- 2 tablespoons Dijon mustard
- 1/2 cup water
- 3 tablespoons crème fraîche or heavy cream
