- 2 1/2 cups cornmeal
- 2 tea. baking powder
- 1 1/2 tea. salt
- 3 eggs, beaten
- 1/4 cup canola oil
- 1 (15 oz) can creamed corn
- 1 1/4 cups canned pumpkin
- 1 cup ricotta cheese
- 1 cup diced red onion
- 3/4 cup seeded and diced poblano chilies
- 1 Tbsp. minced fresh ginger
- 1 clove garlic, minced ( 1/2 tea)
- cooking spray, to coat pan
Chicken Penne in Smoky Chili Cream Sauce

Cook penne following package directions
- 12 oz. uncooked penne pasta
- 1 1/2 Tbsp. vegetable oil
- 1 lb. chicken breasts, cut into 3/4" pieces
- 1/3 cup chopped onion
- 1 tea. minced garlic
- 2 cups Alfredo sauce
- 1 Tbsp. chipotle in adobo sauce
- 2 tea. chile powder
- 2 tea. maple syrup
- 1/2 tea. salt
- 8 slices fully cooked bacon, heated in microwave and chopped
- 2 Tbsp. chopped fresh cilantro
Pork Loin - Balsamic Rosemary Loin w/ Roasted Potatoes

Preheat oven to 450 degrees
- 1 1/2 cups fresh rosemary
- 12 cloves garlic
- 3 Tbsp. olive oil
- 2 Tbsp. balsamic vinegar
- 1 tea. salt
- 2 tea. pepper
- 2 1/2 lb. pork loin
- 2 1/2 lb. small red potatoes, cut into 1/2" wedges

- 1 cup (8 oz) orzo
- 3 Tbsp. olive oil
- 1 garlic clove, sliced
- 1/2 tea. lemon zest
- 2 Tbsp. lemon juice
- 3 Tbsp. minced parsley
- 1/4 cup grated Parmesan cheese
- slivered pitted kalamata olives

- 1/2 cup sugar
- 3 tablespoons butter
- 2 teaspoons cinnamon
- 1 teaspoon cumin*
- 1-1 1/2 teaspoons smoked paprika* - some smoked paprikas are quite hot, if you don't like "hot", just use 1 teaspoon and they will be mildly spiced.
- 1 teaspoon vanilla
- sea salt
- The cumin and the smoked paprika give just a hint of mysterious, delicious flavor - even though these are savory spices, these almonds are still wonderful served with sweets like ice cream or yogurt.
Jambalaya Soup

Heat a large pot of Dutch oven over medium-high heat add the olive oil
- 3 Tbsp. olive oil
- 3 andouille sausages (about 12 oz), halved lengthwise and sliced
- 4 green onions, chopped (white and green parts separated)
- 1 rib celery, chopped
- 1 red bell pepper, chopped
- 3 cloves garlic, finely chopped
- 1 tea. Cajun seasoning
- 1 1/2 cups water
- 4 cups chicken broth
- 1 cup long-grain white rice
- 1 - 14 oz. can diced tomatoes
- 1 bay leaf
- salt
- Cornbread for serving
