Dip - Three Pepper Bean Dip

In a large bowl, combine all ingredients except the cheese
- 1 can (16 oz) refried beans
- 1 1/2 cups (12 oz) sour cream
- 1 cup salsa
- 4 green onions, chopped
- 1 can (4 oz) chopped green chilies
- 3 oz. cream cheese
- 1 jalapeno, seeded and chopped
- 2 Tbsp. chilpotle peppers in adobo sauce, chopped
- 1 1/2 tea. cumin
- 1/2 tea. chili powder
- 1 cup (4 oz) shredded Colby-Monterey Jack
- tortilla chips or assoted fresh vegetables
El Paso Pumpkin Pie (w/ tequila)

Thoroughly mix all ingredients together and pour into pie crusts
- 2 eggs, lightly beaten
- 1 can (16 oz.) solid pack pumpkin
- 3/4 cup sugar
- 1/2 tea. salt
- 1 tea. ground cinnamon
- 1/2 tea. ground ginger
- 1/4 tea. ground cloves
- 1 1/2 cups evaporated milk
- 1 Tbsp. Kahlua
- 2 Tbsp. tequila
- 2 (9") pie shells

- 1/2 pint whipping cream
- 2 Tbsp. sugar

Steak and Onion Kabobs

In a medium bowl, whisk together oil and next 6 ingredients; pour into a large ziplock bag, and add steak
- 3/4 cup olive oil
- 1/4 cup whole-grain Dijon mustard
- 1/4 cup honey
- 2 Tbsp. chopped fresh parsley
- 2 Tbsp. Sriracha
- 1 tea. pepper
- 1/2 ta. salt
- 3 lb. boneless sirloin steak, cut into 2" pieces
- 2 red onions, cut into wedges
Tortellini Antipasta Salad

Mix all together
- 9 oz. pkg. cheese tortellini
- 1 cup drained giardeniera veggie mix
- 1 can kidney beans
- 2 plum tomatoes
- 4 green onions
- 2 Tbsp. fresh chopped parsley
- 1/2 cup balsamic vinaigrette
Snack mix - Lemon Rosemary Chex Mix

In large microwavable bowl, microwave butter on high about 40 seconds, or until melted
- 1/4 cup butter
- 2 Tbsp. fresh rosemary leaves, minced
- 1 Tbsp. lemon zest
- 1 tea. garlic powder
- 1 tea. salt
- 2 cups Corn Chex
- 2 cups Wheat Chex
- 2 cups Rice chex
- 1 cup raw almonds
- 1 cup Parmesan-flavored crackers (not fish-shaped)
Rhubarb Raisin Marmalade

- 2 medium oranges
- 1 medium lemon
- 6 sups sugar
- 6 cups fresh or frozen rhubarb
- 1 1/2 cups fresh or frozen strawberries
- pinch salt
- 1 cup raisins
Southwest Cranberries (slow cooker)

- 16 oz. can whole-berry cranberry sauce
- 10 1/2 oz. jar jalapeno jelly
- 2 Tbsp. chopped fresh cilantro

- 12 (6") wood skewers
- 24 grape or small cherry tomatoes
- 3 oz. feta cheese (cut into 12 1/2" pieces)
- 12 pitted kalamata olives
- 1/2 small red or sweet onion, cut into 12 1/2" pieces
- 2 tea. fresh lemon juice
- 2 tea. red wine vinegar
- 4 tea. chopped fresh oregano
- 2 Tbsp. extra-virgin olive oil
- salt and pepper to taste
