Chicken - Roasted Lime Whole Chicken

Combine first 9 ingredients in a small bowl
- 1/2 cup Dijon mustard
- 1/4 cup lime juice
- 1/4 cup soy sauce
- 2 Tbsp. minced fresh parsley or 2 tea. dried parsley flakes
- 2 Tbsp. minced fresh rosemary or 2 tea. dried rosemary, crushed
- 2 Tbsp. minced fresh sage, or 2 tea. rubbed sage
- 2 Tbsp. fresh thyme or 2 tea. dried thyme
- 1 tea. white pepper
- 1 tea. nutmeg
- 1 roasting chicken (6-7 lb)
- 4 medium limes, cut into wedges
Butter - Rosemary Butter

- 2 Tbsp. chopped rosemary leaves
- 2 minced garlic cloves
- 2 Tbsp. orange juice or white wine
- small amount of orange zest
- 1 cup butter

- 1 stick margarine, melted
- 1 cup sour cream
- 2 eggs, beaten
- 1 - 8 1/2 oz. box corn bread mix
- 1 - 15 oz. can cream-style corn
- 1 - 15 oz. can whole kernel corn
- 1/4 cup chopped onion
- 1 can diced green chilies
- 1/2 tea, salt
- Paprika
Chile Relleno Bake

Brown beef and chorizo. Add onion and garlic; cook till transparent
- 1/2 lb. hamburger
- 1/2 lb. chorizo
- 1 cup chopped onion
- 2 cloves garlic, minced
- 2 (4 oz) cans whole green chiles, divided
- 2 cups shredded cheddar, divided
- 4 eggs
- 1/4 cup flour
- 1 1/2 cups milk
- 1/2 tea. salt
- Tabasco
Orzo & Grilled Corn and Bell Pepper Salad

Preheat broiler. Cut bell peppers in half lengthwise; discard seeds and membranes
- 2 red bell peppers (or a 7 oz. jar roasted bell peppers)
- 1 cup uncooked orzo
- 3 Tbsp. olive oil, divided
- 3 ears corn
- 1 red onion, peeled and cut into 1/2" thick slices (slide a skewer through onion slices to help keep them together while BBQing)
- cooking spray
- 1/4 cup thinly sliced green onions
- 1/4 cup chopped fresh flat-leaf parsley
- 3 Tbsp. white wine vinegar
- 1 tea. salt
- 1/2 tea. pepper
- 1 jalapeno, minced
- 1 garlic clove, minced
P.F. Chang's Chicken Lettuce Wraps

Prepare chicken: whisk the egg white, cornstarch and rice wine in a bowl
- FOR THE CHICKEN:
- 1 large egg white
- 1 Tbsp. cornstarch
- 1 Tbsp. Chinese rice wine or dry sherry
- 1 1/2 lb. boneless chicken breasts, diced
- FORE THE STIR-FRY SAUCE:
- 2 Tbsp. oyster sauce
- 1 Tbsp. hoisin sauce
- 1 Tbsp. soy sauce
- 1 Tbsp. Chinese rice wine or dry sherry
- 1 tea. toasted sesame oil
- 2 tea. cornstarch
- FOR THE NOODLES:
- 2 bundles cellophane noodles
- peanut oil, for frying
- FOR THE STIR-FRY:
- 4 Tbsp. peanut oil
- 3 cloves garlic, minced
- 1 tea. minced, peeled ginger
- 1 jalapeno pepper, seeded and minced
- 4 green onions - 2 minced, 2 cut into 1" pieces
- kosher salt
- 1/4 tea. sugar
- 1/2 lb. shitake mushrooms, stemmed and diced
- 3/4 cup diced water chestnuts
- Small lettuce leaves, for serving
- Soy sauce, chili paste and/or hot mustard, for serving
Pork Tenderloin - Spice Rubbed with Mustard BBQ Sauce

Prepare grill. Sauce: cook bacon until almost crisp, stirring occasionally

- 2 bacon slices, finely chopped
- 1 cup chopped onion
- 1/2 cup prepared yellow mustard
- 5 Tbsp. honey

- 2 Tbsp. cider vinegar
- 1/4 tea. chili powder
- 1/4 tea. ground cumin
- 1 Tbsp. brown sugar
- 1 Tbsp. smoked paprika
- 2 tea. chili powder
- 1 tea. garlic powder
- 1 tea. ground cumin
- 3/4 tea. salt
- 1/2 tea. pepper
- 1/8 tea. ground red pepper
- 2 (1 ob) pork tenderloins, trimmed

1. Crumble sausage and ground beef into a microwave-safe container
- 1/2 pound mild pork sausage
- 1/2 pound ground chuck
- 1 (8-oz.) jar taco sauce
- 1/2 cup (2 oz.) shredded Monterey Jack cheese
- 1 (4.5-oz.) can chopped green chiles
- 1 (16-oz.) package won ton wrappers
- Toppings: sour cream, shredded cheese, salsa, chopped lettuce

- 1/2 cup (125 mL) graham cracker crumbs
- 1 tbsp (15 mL) sugar
- 8 oz (250 g) cream cheese, softened
- 1/3 cup (75 mL) sugar
- zest of one lime
- 2 tbsp (25 mL) fresh lime juice
- 1 egg
