1 In 4-quart Dutch oven, heat oil over medium-high heat
- 1 tablespoon olive oil
- 1 1/2 cups chopped onions (2 medium)
- 4 medium poblano chiles, seeded, chopped
- 3 cloves garlic, finely chopped
- 1 jalapeño chile, finely chopped
- 4 1/2 cups Progresso™ chicken broth (from two 32-oz cartons)
- 2 large russet or Idaho baking potatoes, peeled, cut into 1/2-inch cubes
- 3 teaspoons ground ancho chile pepper
- 1 1/2 teaspoons salt
- 1 tablespoon Gold Medal™ all-purpose flour
- 2 tablespoons water
- 1 bag (12 oz) Green Giant™ Steamers™ Niblets™ frozen corn, thawed
- 1 cup whipping cream
- 2 slices bacon, crisply cooked, crumbled, if desired
- Chopped fresh cilantro, if desired
Pork Loin w. Blackberry Chutney

Rinse pork loin and trim silver skin and e3xcewss fat
- 3-4 lb. boneless pork loin roast
- 3 Tbsp, BBQ seasoning
- 3 Tbsp. whole grain mustard
- CHUTNEY
- 1 Tbsp. olive oil
- 1 medium red onion, finely chopped
- 1 Tbsp. minced fresh ginger
- 1 tea. minced fresh garlic
- 2 jalapenos, minced
- 1 lb. fresh blackberries
- 1/3 cup sugar
- 2 Tbsp. red wine vinegar
3 Cheese Mac and Cheese

- 1 box (1#) penne rigate
- 3/4 lb. Sharp Cheddar, shredded
- 1/2 lb., Gruyere, shredded
- 1/2 cup Asiago or Parmesan, shredded

- 3 Tbsp., flour
- 2 cups milk
- 1/2 tea. onion powder
- 1/2 tea. salt
- 1/8 tea. cayenne pepper

- 2/3 cup unsweetened pineapple juice
- 1/3 cup tequila
- 2 Tbsp. packed brown sugar
- 2 Tbsp. achiote paste
- 2 Tbsp. ketchup
- 1 Tbsp. fresh lime juice
- 1 Tbsp. habanero hot sauce
- 1 Tbsp. soy sauce
- 2 garlic cloves, crushed through a press
- 2 large whole boneless, skinless chicken breasts (3 lb. total)
- salt and pepper
Bread Pudding - Amaretto & white chocolate French bread pudding

- 1 cup white, granulated sugar

- 2 Tbsp. sweet relish
- 1 Tbsp. finely chopped cornichons

- 1/4 tea. hot sauce
- salt and pepper to taste

In a large bowl, combine potatoes, butte,r eggs, milk, vanilla and sugar
- 2 1/4 - 2 1/2 lb. (about 4 cups) sweet potatoes, cooked, peeled and mashed
- 1/3 cup butter, melted
- 2 eggs, beaten
- 1/2 cup milk
- 1 tea. vanilla
- 1/2 cup sugar
- TOPPING
- 1/2 cup chopped nuts
- 1/2 cup shredded coconut
- 1/2 cup packed brown sugar
- 3 Tbsp. butter, melted
Banana-Nut-Corn Bread

In a bowl, combine all ingredients just until blended
- 2 pkgs. (8 1/2 oz each) corn bread/muffin mix
- 1 cup mashed rip bananas (about 2 medium)
- 1 cup chopped walnuts
- 1 cup 2% milk
Chile & Beer Braised Brisket

- 6 dried New Mexico, Anaheim or Ancho chiles, stemmed and seeded
- 1 14 oz. can diced fire roasted tomatoes
- 1 large onion, coarsely chopped

- 1 Tbsp. + 1 tea. chili powder
- 2 tea. cumin
- 1 tea. salt
- 1 cup Mexican lager
- 1 Tbsp. vegetable oil
- 2 lb. trimmed flat, first-cut brisket
- 1 15 oz. can pinto beans, rinsed

- 3 jalapenos, finely diced
- 1/2 tea cayenne pepper
- 4 cups sugar
- 1 pkg. powdered pectin
