Corn - Grilled Corn & Black Bean Salad

Preheat a grill to medium
- 4 ears corn, shucked
- 3 Tbsp. olive oil
- 2 Tbsp. fresh lime juice
- 2 tea. chili powder
- salt
- 2 cans (15 oz) black beans, rinsed and drained
- 3 green onions, thinly sliced
- 1/3 cup chopped cilantro
- 4 oz. queso fresco, crumbled
- 1 avocado, thinly sliced
Chinese Orange-Barbecue Cashew Chicken

Place a large skillet over high heat with about 2 Tbsp
- 3 Tbsp. vegetable oil
- 1 1/2 lbs. boneless, skinless chicken breasts, chopped into bite-size pieces
- salt and pepper
- 1 red bell pepper, chopped into 1/2" dice
- 1 onion, chopped into 1/2" dice
- 2-3 garlic cloves, finely chopped
- 1" fresh gingerroot, peeled and grated
- 1/4 cup hoisin sauce
- 1/4 cup orange marmalade
- 1 Tbsp. hot sauce
- 2 Tbsp. tamari (aged soy sauce)
- 1/2 cup chicken stock
- 1/2 cup honey-roasted cashews
- 4 green onions, thinly sliced on the bias
aDressing: Pepper Jelly Vinaigrette

Place jelly in a 1 cup measure
- 1/4 cup pepper jelly
- 2 Tbsp. cider vinegar
- 1 Tbsp. extra virgin olive oil
- 1/8 tea. salt
- 1/8 tea. pepper

Combine to 8 ingredients in a heat proof bowl
- 1 Tbsp. lemon juice
- 3 Tbsp. ketchup
- 3 Tbsp. minced yellow onion
- 1 1/2 Tbsp. worcestershire
- 1 Tbsp. sweet pickle relish
- 1 tea. sugar
- 1/2 tea. salt
- 1/4 tea. pepper
- 1 Tbsp. lemon juice
- 3 egg yolks
- 1/2 Tbsp. water
- 1 stick butter, melted
- 4 eggs, poached
- 4 sliced toasted rye bread
- 1/2 lb. sliced corned beef
- 1 cup drained sauerkraut

- 1 1/2 cups broken pretzel pieces
- 1 1/2 cups cocktail peanuts

Jalapeno Potato Salad

Place the potatoes in a large saucepan and cover with water
- 6 medium red potatoes, peeled and cubed
- 2 celery ribs, chopped
- 2 hard cooked eggs, chopped
- 1/4 cup chopped onion
- 2 small jalapenos, seeded and chopped
- 1/4 cup mayonnaise
- 3 Tbsp. spicy brown mustard
- 3 tea. hot pepoper sauce
- 1/4 tea. ground cumin
- 1/4 tea. pepper
Potatoes - made red with chile powder

Melt butter in a frying pan, add olive oil, and saute the onion for 2-3 minutes
- 2 Tbsp. butter
- 3 Tbsp. olive oil
- 1 medium onion, cut in half lengthwise and sliced
- 4 large white potatoes, thinly sliced
- 1/2 tea. salt
- 1 tea. pepper
- 1 tea. ground mild New Mexico red chile, or to taste
Chicken Las Palmas (Las Palmas green sauce) using a brick

Cut chicken by the backbone and remove the backbone, keeping the rest of the chicken in one piece
- 1 chicken, 3-4 lb.
- 6 garlic cloves, chopped
- 2 Tbsp. fresh oregano, chopped
- 1 Tbsp. cumin
- 1/2 cup lime juice
- 1/4 cup olive oil
- 1 white onion, finely diced
- 1/2 cup Las Palmas green sauce
- 1/2 bunch parsley, chopped
- salt and pepper

Just mix the dough and form into wedges as instructed, then freeze them until ready to bake
- 2 3/4 cups flour
- 2 Tbsp. sugar
- 4 tea. baking powder
- 1/4 tea. salt

- 8 oz. (2 cups) shredded sharp cheddar cheese, divided
