aDressing: Strawberry Balsamic Vinaigrette

Place jam in medium bowl and whisk in the vinegar and then olive oil
- 2 tea. strawberry jam
- 1 Tbsp. balsamic vinegar
- 3 Tbsp. olive oil
- salt and pepper
Cranberry Pork Roast

Mix all ingredients except pork in a 3 qt
- 1 can (16 oz) whole-berry cranberry sauce
- 1 medium onion, chopped
- 1 can (5.5 oz) apricot nectar
- 1/2 cup sugar
- 1/2 cup coarsely chopped dried apricots
- 2 tea. cider and white vinegar
- 1 tea. dry mustard
- 1 tea. salt
- 1/4 tea. crushed red pepper
- 1 - 2 1/2 # boneless pork loin roast, well trimmed
Apricot Amaretto Preserves

Slice apricots into 1/2" pieces and cook in saucepan with 2 cups water until tender
- 5 lb. apricots, pitted
- 1 lemon, juiced
- 1 (1.7 oz) box fruit pectin
- 1 Tbsp. butter
- 6 cups sugar
- 3 oz. amaretto liqueur
Cheesecake Brownies

Prepare brownie mix batter according to package directions
- 1 pkg. fudge brownie mix (13x9 pan size)
- 2 pkg. (3 oz each) cream cheese, softened
- 6 Tbsp. butter, softened
- 1/2 cup sugar
- 2 Tbsp. flour
- 1 tea. vanilla extract
- 2 eggs, lightly beaten
- 1 can (16 oz) chocolate frosting
Chicken, Corn & Chile Chowder

Heat the oil in a saucepan, add the onion, garlic, and celery and saute until limp
- 4 Tbsp. olive oil
- 1 large yellow onion, chopped
- 2 ribs celery, chopped
- 2 cups corn, cut off the cob, or frozen
- 2 cups cooked chicken, diced
- 2 long green chiles, roasted, peeled, seeded and chopped
- 1/2 tea. pepper
- 2 dashed Tabasco
- 1 clove garlic, minced
- 2 cups chicken broth
- 1 cup half n half
Chicken - Orange Balsamic Glazed Chicken

In a large skillet, heat the olive oil over medium-high to high heat
- 2 Tbsp. extra-virgin olive oil
- 2 lbs. boneless, skinless chicken breasts
- salt and pepper
- 1 tea. poultry seasoning
- 2-3 sprigs fresh rosemary, leaves removed and chopped
- 1/3 cup orange marmalade
- 1/4 cup balsamic vinegar
- 1/2 cup chicken stock
- 2 green onions, white and green parts, finely chopped
aDressing: Popeye's Coleslaw

Mix all together. Add 1 lb
- 2 Tbsp. sugar
- 1/4 tea. pepper
- 1 tea. salt
- 1/4 cup sweet pickle juice
- 1/4 cup white vinegar
- 1 large dill pickle, minced (about 2 Tbsp)

Pickles - Home Canned Dill Pickles

4# cucumbers makes 8 pints
- Brine:
- 2 quarts vinegar
- 2 quarts water
- 1 cup pickling salt

- for each jar:
- 2-3 cloves garlic
- 1-2 fresh sprigs of dill
- 1/4 tea. pickling spice
- 2-3 small dried red peppers

Preheat oven to 350F. Put the torn bread cubes in a large bowl
- 1 large day-old (at least) loaf of crusty bread or a baguette, torn or cubed
- 1 cup pumpkin puree
- 4 large eggs
- 1 cup maple syrup or brown sugar

- 2 tsp. vanilla
- 1 tsp. cinnamon
