Mexican Red Rice

In medium saucepan, heat oil over medium-high heat
- 1 Tbsp. vegetable oil
- 1/2 cup chopped onion (1 medium)
- 2 cloves garlic, minced
- 1 tea. ground ancho chile pepper
- 1/4 tea. salt
- 1 cup long grain rice
- 1 14 oz. can chicken broth
- 3/4 cup purchased salsa
- 1/4 cup water
- 1/2 cup finely snipped fresh cilantro
Fresh Tomato Sauce (for pizza or spaghetti)

Prepare a pot of boiling water and a bowl of ice water
- 3 lbs. roma tomatoes
- 1/4 cup olive oil
- 3 oz. Spanish onion, cut into small dice
- 1 Tbsp. chopped garlic
- 1 Tbsp. chopped fresh basil
- pinch of chopped fresh thyme
- 1 1/2 tea. salt
- 3 grinds black pepper
- 1 tea. sugar
Mediterranean Pasta Salad

Bring a large pot of salted water to a boil
- 1 lb. tricolor pasta, such as bow tie or fusilli
- 1/4 cup balsamic vinegar
- 2-3 tea. Dijon mustard
- salt and pepper
- 2/3 to 3/4 cup olive oil
- 1/3 cup diced sun-dried tomatoes
- 1/4 cup fresh basil, julienned
- 1/4 cup diced onion
- 2 large pickled pepperoncini peppers, diced
- 2 Tbsp. black olives, halved
- 2 tea. chopped fresh oregano
- 1 1/2 oz. feta cheese, crumbled
- 1 1/2 Tbsp. grated Parmesan cheese
Chicken Breast - Baked with Parmesan Crust

Preheat oven to 450 degrees
- 2 Tbsp. Dijon mustard
- 1/2 tea. thyme leaves, chopped
- salt
- 1/4 tea. cayenne pepper
- 4 boneless, skinless chicken breast halves (about 8 oz each)
- 3/4 cup freshly grated parmesan cheese
- 3/4 cup panko or dried coarse baguette breadcrumbs
- cooking spray
aDressing: Asian Sesame Ginger

stir together all of the ingredients except the oil
- 1/2 cup rice wine vinegar
- 1/2 Tbsp. soy sauce
- 2 Tbsp. honey
- 1/2 tea. fresh grated ginger
- 2 tea. toasted sesame seeds
- 1/2 tea. sesame oil
- 2/3 cup canola oil

- 2 medium plum tomatoes
