AScorn Squash - Parmesan Roasted

Preheat oven to 400 degrees
- 1 acorn squash, halved lengthwise, seeded and cut into 3?4" slices
- 1/4 cup grated parmesan cheese
- 8 sprigs fresh thyme or 1 tea. dried thyme
- 2 Tbsp. olive oil
- 1/2 ta., salt, or to taste
- 1/4 tea. pepper, or to taste
Tortilla Soup with Roasted Vegetables

Preheat oven to 450 degrees
- 1/4 cup olive oil
- 1 tea. chili powder
- 1 tea. ground cumin
- 1/2 tea. dried oregano
- 8 ripe plum tomatoes, sliced 1/4" thick
- 1 medium onion, thinly sliced
- 4 garlic cloves, crushed through a press
- 2 jalapenos, seeded and minced
- 1 (13 1/2 oz) cans chicken broth
- 1/4 tea. salt
- 6 corn tortillas, halved and cut crosswise into thin strips
- Diced avocado, chopped cilantro, grate Monterey Jack cheese, and lime wedges
Sausage Bake

Preheat oven to 350 degrees
- 2 cans (12 oz) evaporated milk
- 8 eggs, beaten
- 1 lb. precooked sausage links, cut into 1/4" pieces
- 2 cups (8 oz pkg) shredded cheddar cheese
- 1 cup chopped red/green bell peppers
- 2 green onions (green part only), sliced
- 1/2 tea. onion powder
- 1/4 tea. garlic powder
- 8 cups 1/2" cubed Italian or French bread (about 9 slices
Pork Roast - w/ red potatoes, kielbasa, sauerkraut

Place potatoes in a greased 6 qt
- 16 small red potatoes
- 1 can (14 oz) sauerkraut, rinsed and well drained
- 2 large tart apples, peeled and cut into wedges
- 1 lb. kielbasa, Polish sausage, cut into 16 slices
- 2 Tbsp. brown sugar
- 1 tea. caraway seeds
- 1 tea. salt, divided
- 1 tea. pepper, divided
- 1 boneless pork loin roast (3 lb)
- 3 Tbsp. canola oil
Southwest Chicken Salad

Fill a medium saucepan halfway with water; bring to a boil and add 1 tea
- 1 1/2 lb. boneless, skinless chicken breasts
- 1/4 cup sour cream
- 2 Tbsp. mayonnaise
- 3 Tbsp. fresh lime juice
- 2 tea. chili powder
- 1 - 15 oz. can black beans, rinsed
- 1 cup corn kernels, fresh or frozen, thawed
- 2 green onions, thinly sliced
- 1/2 cup fresh cilantro, chopped
Rhubarb Pineapple Jam (cooked)

- 5 cups rhubarb
- 4 cups sugar
- 1 20-oz can. crushed pineapple, drained

Potatoes au Gratin

CUT RECIPE IN HALF AND PLACE IN INDIVIDUAL CERAMIC FRY PANS AND BAKE
- 2 tea. butter
- 1 onion (about 5 1/2 oz) thinly sliced
- 3 garlic cloves, minced
- 4 cups 2% milk
- 1 tea. salt
- 1/4 tea. pepper
- 3 oz. flour (about 2/3 cup)
- 6 oz. shredded sharp Cheddar (1 1/2 cups), divided
- 6 oz. diced ham (about 1 1/2 cups)
- 3 lb. peeled baking potatoes, cut into 1/8" thick slices

Breast of Chicken in Lemon Sauce

- 3 or 4 boneless chicken bre3asts, split
- 3 Tbsp. flour
- 1 Tbsp. parsley flakes

- 1 1/2 cup chicken broth (or 2 bouillon cubes, dissolved in 1 1/2 cups water)

- 1/2 tea. cumin
- 1/2 tea. salt
- 1/2 cup water
