Cole Slaw - Bacon Slaw

Cook bacon in a large skillet over medium-high heat until crisp, drain, crumble and set aside
- 8 slices bacon
- 1 cup mayonnaise
- 1/4 cup red wine vinegar
- 1/4 cup sugar
- 1 tea. celery seed
- 1 (16 oz) bag coleslaw mix
- 1 green onion, chopped
Prickly Pear Jalapeno Jelly (I made)

- Prepare Prickly Pear juice
- 1 pkg. powdered pectin (or 6 Tbsp. Ball RealFruit Classic Pectin) - I used both - either works well
- 2 1/4 cups prickly pear juice
- 3 Tbsp. lime juice (or lemon juice) I've used both
- 6 oz. chopped jalapenos
- 6 oz. chopped green/orange/yellow bell peppers
- 5 cups sugar
- 1 Tbsp. butter
Galette - Summer Fruit and Sweet Cream Cheese Galette

Adjust oven rack to lowest position and heat oven to 400 degrees
- 1 pkg. (8 oz) cream cheese, softened
- 1/2 cups confectioners' sugar
- 3 Tbsp. cornstarch, divided
- 1 egg, separated
- 2 Tbsp. sugar, plus a little extra for sprinkling
- 1 tea. vanilla
- 1 refrigerated pie crust
- 2 cups fruit (pick one or mix thinly sliced plums, peeled peaches or apricots; or mixed berries)
Rhubarb Oatmeal Bars

Combine all ingredients for crust and mix until crumbly
- CRUST
- 1/2 cup chopped nuts
- 1 1/2 cups rolled oats
- 1 cup brown sugar
- 1/4 tea. salt
- 1 1/2 cups flour
- 1 cup butter
- 1/4 tea. baking soda
- FILLING
- 3 cups chopped rhubarb
- 1 1/2 cups sugar
- 2 Tbsp. cornstarch
- 1/4 cup water
- 1 tea. vanilla
Mixed Berry Jam

Makes 4 half pints
- 2 (6 oz each) packages fresh blackberries (2 1/2 cups)
- 1 (6 oz) container fresh raspberries (1 1/2 cups)
- 1 pint fresh blueberries (2 cups)
- 3 cups sugar
- 1 Tbsp. fresh lime juice
Jambalaya #2 (recipe from the 1930's w/ pork, ham, sausage

Cut pork (lean and fat) into cubes about 1/2" square
- 1/2 lb. fresh pork
- 1 onion
- 1 clove garlic
- 1/2 lb. ham
- 6 small smoked pork sausages
- 2 Tbsp. butter
- 1 bay leaf
- 1 sprig parsley
- 1 sprig thyme (or 1/.4 tea. dried)
- 1 whole clove
- 1 1/2 quarts chicken broth
- 1/2 tea. Tabasco
- 3/4 tea. salt
- 1 cup uncooked rice
Sweet Potatoes - Bruleed Mashed Sweet Potatoes

Preheat broiler Combined first 6 ingredients in a bowl
- 6 cups hot mashed sweet potatoes (about 4 lbs)
- 3/4 cup molk
- 3 Tbsp. butter, softened
- 1/2 tea. salt
- 1/4 tea. cinnamon
- 1/8 tea. nutmeg
- 1/2 cup packed brown sugar
Watermelon & Feta Spiked with Chili Salad

In a jar with a tight-fitting lid, combine olive oil, lime juice, vinegar, thyme, shallot, and serrano chile
- 1 cup extra-virgin olive oil
- 2 tablespoons lime juice
- 2 tablespoons champagne vinegar
- 2 teaspoons fresh thyme, chopped
- 1 small shallot, minced
- 1 serrano chile, stemmed, seeded and sliced into small half-rounds
- kosher salt
- 1 small seedless watermelon
- 1/3 pound feta cheese, wedge sliced 1/8-inch thick (about 12 slices) or crumbled Calique Panela Mexican cheese
- 1 bunch arugula
- Sliced serrano chile and lime, for garnish
Rhubarb Cranberry Jam (w/jello)

- 67 cups rhubarb
- 2 14 oz. cans whole cranberry jelly
- 5 cups sugar
- 1 3 oz., pkg. cranberry jello
Cheesy Chile Strata

Preheat broiler. Arrange poblanos skin-side up on a baking sheet
- 4 poblano chile peppers, halved lengthwise and seeded
- 1 bunch medium spring onions, stems cut into 2" pieces, bulbs quartered
- 1/4 cup masa harina or flour
- vegetable oil for frying (3-4 cups)
- 10 corn tortillas, cut into 2" pieces
- 8 oz. Oaxaca or muenster cheese, grated (2 cups)
- 8 oz. pepper jack cheese, grated (2 cups)
- 3 cups whole milk
- salt and pepper
- 1/2 tea. chili powder
- Sour cream & jalapenos for topping (optional)
