Pepperoni-Olive Grilled Cheese sandwich

Spread bread with pizza sauce add cheese, pepperoni, olives butter outside of bread Grill or use panini press
- Italian bread
- Mozzarella or Provolone
- sliced pepperoni
- sliced black olives
- Pizza sauce
Spicy Green Rice

Cover rice with hot water and let soak fror 5 minutes
- 1 cup long-grain rice
- 1/4 cup vegetable oil
- 1/2 white onion, roughly chopped
- 2 garlic cloves, peeled and roughly chopped
- 4 jalapeno peppers
- 4 tomatillos
- 1 1/4 cups water or chicken broth, separated
- salt, to taste
- 4 cilantro leaves, finely chopped
Shoulder - Slow Cooked Carnitas

Cut roast in half; place in a 5 qt
- 1 boneless pork shoulder butt roast (3-4 lb)
- 3 garlic cloves, thinly sliced
- 2 tea. olive oil
- 1/2 tea. salt
- 1/2 tea. pepper
- 1 bunch green onions, chopped
- 1 1/2 cups minced fresh cilantro
- 1 cup salsa
- 1/2 cup chicken broth
- 1/2 cup tequila or additional chicken broth
- 2 cans (4 0z each) chopped green chilies
Vodka Cream Pasta

Using large skillet, add oil,m butter, garlic and shallots
- 1 Tbsp. olive oil
- 1 Tbsp. butter
- 2 garlic cloves, minced
- 2 shallots, minced
- 1 cup vodka
- 1 cup chicken broth
- 1 can (28 oz) crushed tomatoes
- salt and pepper to taste
- 1/2 cup heavy cream
- 12 oz. pasta, such as penne rigate
- 20 leaves fresh basil, shredded or torn
- crusty bread
Chicken breasts - Sweet and Hot Pepper Chicken

Preheat grill to medium-high heat
- 1/4 cup bbq sauce
- 2 Tbsp. hot pepper jelly
- 4 boneless, skinless chicken breasts (5-6 oz each)
- salt and pepper
- 1 cup shredded pepper jack cheese
- 1 jalapeno, sliced
Oven-Roasted Pizza Sauce

This recipe makes more sauce than you will need for your pizzas
- 4 lb.m Roma tomatoes, quartered (8 cups)
- 1 cup chopped onion
- 4 cloves garlic
- 2 tea. salt
- 1 tea. red papper flakes
- 1 tea. sugar
- 1/2 cup olive oil
- 1/2 cup snipped fresh basil
Cranberry-Orange Pudding

Preheat oven to 325 degrees
- For the batter:
- 1/2 stick butter
- 4 1/2 cups cranberries
- 3 Tbsp. sugar
- 1 1/4 cups flour
- 2 tea. baking powder
- 1/2 tea. baking soda
- 1 3/4 cups + 2 Tbsp. sugar
- 2 eggs, beaten
- 1 stick butter, melted
- few drops orange extract
- 1/3 cup flaked almonds
- Sugar, to sprinkle on top
Pepperoni Pasta Salad

Cook the pasta according to package directions
- Dressing:
- 12 oz. package of tri-colored rotini noodles
- 1 medium onion, chopped
- 1/2 cup black olives, sliced
- 1 1/2 cups sharp cheddar cheese, cubed (about 8 oz)
- 4 oz. sliced pepperoni
- 1 cup frozen peas, thawed
- 1/2 tea. salt
- 1/2 tea. pepper
- 1 Tbsp. Penzey's Tuscan Sunset
- 1 tea. Aleppo pepper, optional
- 1/2 tea. minced garlic
- 1 Tbsp. water
- 2/3 cup vegetable or olive oil
- 1/3 cup vinegar
Salad - Margarita Chicken Salad

Place chicken breast in a ziplock
- 4 skinless, boneless chicken breast halves
- 1 1/2 cups margarita drink mix
- 1 tea. ground cumin
- 1 tea. finely shredded lime peel
- 1/2 cup mayonnaise
- 2 Tbsp. lime juice
- 1/8 tea. cayenne pepper
- 4 medium tomatoes, sliced
- 2 medium avocados, halved and sliced
- 1/2 medium red onion, thinly sliced
- 1/4 tea. creacked black pepper
Jalapeno Corn Gravy

Mix the cornstarch with the broth
- 1 cup vegetable broth
- 1 Tbsp. cornstarch
- 1 Tbsp. olive oil
- 1 medium onion, chopped
- 2 jalapenos, seeded and chopped
- 3 cloves garlic, chopped
- pinch of rubbed sage
- 2 cups corn
- 1/4 cup milk
- salt
- lemon juice
