Tarts - Mini Tortilla Quiches

Be sure to reserve the tortilla scraps for the crust of the Chipotle-Cheddar Cheesecake with Chunky Salsa
- nonstick spray
- 5 10" plain, spinach or tomato flour tortillas
- 1 cup chopped fresh cilantro
- 1/2 cup half-and-half or light cream
- 1/2 cup sliced green onions
- 2 eggs
- 1/4 te. salt
- 1/8 tea. cayenne pepper
- 3 Tbsp. sour cream, for garnish
- paprika, for garnish
- recipe didn't call for it, but how about some shredded cheese in the mixture?
- finely diced Jalapeno or poblano?
Nuts - Chili-Roasted Cashews

Preheat oven to 250 degrees
- 1 egg white
- 1 Tbsp. water
- 1 lb. (about 3 1/2 cups) whole cashews
- 1/3 cup sugar
- 1 Tbsp. mild chili powder
- 2 tea. cumin
- 2 tea. salt
- 1/2 tea. cayenne
Bread Pudding - Sausage & Cheddar Bread Pudding

In a large bowl, combine the first 8 ingredients
- 3 cups (12 oz.) shredded sharp cheddar cheese
- 1 can (28 oz) diced tomatoes, drained
- 1 lb. bulk Italian sausage, cooked and crumbled
- 4 green onions, thinly sliced
- 1/4 cup minced fresh basil (or 1 Tbsp. dried)
- 1/4 cup packed brown sugar
- 1 tea. dried oregano
- 1 tea. garlic powder
- 3 cups cubed French bread
- 6 eggs
- 1 1/2 cups heavy whipping cream
- 1/2 tea. salt
- 1/2 tea. pepper
- 1/2 cup grated Parmesan cheese
Pork Tenderloin with Red Wine Sauce

Serve with grilled pumpkin or squash
- 1 Tbsp. oil
- 2 pork tenderlioins, about 1 1/4 lb. each
- 1 tea. salt
- pepper
- 4 cloves garlic, minced
- 1 Tbsp. finely chopped fresh rosemary
- 1/2 cup red wine (preferably zinfandel or pinot noir)
- 1/4 cup balsamic vinegar
- 3 Tbsp. canned unsweetened pumpkin, or leftover pumpkin puree
- 2 Tbsp. berry jam
- 1 Tbsp. butter
Jalapeno-White Cheddar Country Gravy

In medium nonstick saucepan whisk together milk and flour
- 1 1/3 cups milk
- 4 tea. flour
- 2 sausage patties
- 1 Tbsp. finely chopped fresh jalapeno pepper
- 2 tea. salt-free Southwest or Mexican seasoning
- 1/2 cup shredded white cheddar cheese

- 1 (8 oz) can jalapeno peppers, seeded and chopped
- 1 (8 oz) pkg. shredded cheddar cheese
- 4 eggs, beaten
- 1/2 tea. salt
- 1/4 tea. pepper
- 9 x13 Baking Dish
- 2 (4 oz) cans jalapeno peppers, seeded and chopped
- 1 lb. bacon, cooked and crumbled
- 1 (12 oz) pkg. shredded Mexican 4 cheese blend
- 1 (4 oz) can sliced mushroom stems and pieces, drained
- 10 eggs, well beaten

- 9 cups chopped tomatoes
- 2 medium onions (3 cups chopped)
- 2 red pepper
- 1 green pepper
- 4 jalapenos (1/2 cup = pretty hot)
- 1 1/2 Tsp. mustard seeds
- 1 1/2 Tbsp. celery seeds
- 2 1/2 Tbsp. salt
- 3 cups sugar
- 3 1/2 cups vinegar
Salmon - Spicy Salmon

Preheat broiler. From limes, grate 1/2 tea
- 2 limes
- 3 Tbsp. Thai sweet chilli sauce
- 2 Tbsp. soy sauce
- 1 Tbsp. Dijon mustard
- 4 pieces skinless salmon fillets (6 oz. each)
Caramel Pumpkin Cake

- 1 - 16 oz. pkg. Pumpkin Spice Quick Bread Mix
- 1/2 cup water
- 1/3 cup vegetable oil
- 2 eggs
- 1/2 cup butterscotch chips
- 1/4 cup caramel sauce, plus more for garnish
- Whipped cream
