- 3/4 cup all-purpose flour (spooned and leveled)
- 3/4 cup toasted wheat germ
- Coarse salt and ground pepper
- 4 tablespoons olive oil
- 1 pound Swiss chard (1 large bunch), leaves chopped, stems minced
- 1/2 medium onion, minced
- 1/2 cup grated Gruyere cheese (2 ounces)
- 4 large eggs
- 1 cup whole milk
- 1 pinch ground nutmeg
- 1 pinch ground mustard powder

- 1 1/2 cups lukewarm water
- 2 tablespoons butter
- 1 teaspoon salt
- 4 cups King Arthur Unbleached All-Purpose Flour
- 1/4 cup Baker's Special Dry Milk or nonfat dry milk
- 1/2 cup Hi-maize Fiber
- 2 teaspoons instant yeast
- Topping:
- coarse sea salt, kosher salt, or pretzel salt
- water bath
- 1 1/2 to 2 quarts water
- 1 tablespoon salt
- 1/4 cup baking soda
- Want to make these rolls without the Hi-maize? Substitute all-purpose flour, increasing the water in the dough to 1 3/4 cups.
