Ravioli with Pesto

1. Heat canola oil in a large skillet over medium-high heat
- 1 teaspoon canola oil
- 2 cups sliced mushrooms
- 1 small sweet red pepper, cut into 2-inch-long strips
- 4 cups broccoli flowerets
- 1 cup packed baby spinach leaves
- 1/4 cup pine nuts
- 1/3 cup grated Parmesan cheese
- 1/3 cup olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 packages (9 ounces each) light four-cheese ravioli
Mini Brie & Apple Quiches

Preheat oven to 350°F. Arrange phyllo shells on a large parchment-lined baking sheet
- 30 mini phyllo shells (two 1.9-ounce packages; see Note)
- 1/2 medium apple, peeled and finely diced
- 5 large eggs
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- Pinch of freshly ground pepper
- Pinch of ground nutmeg
- 4 ounces Brie (1/2 small wheel), cut into 30 squares

Pumpkin Bundt Cake Recipe

In a large bowl, combine the first seven ingredients
- 1 package yellow cake mix (regular size)
- 1 package (3.4 ounces) instant butterscotch pudding mix
- 4 eggs
- 1/4 cup water
- 1/4 cup canola oil
- 1 cup canned pumpkin
- 2 teaspoons pumpkin pie spice
- Whipped cream, optional
Gravlax

For the gravlax: Crush the dill with the coarse salt and add the brown sugar
- 1 large bunch fresh dill, roughly chopped
- 2 cups/500 ml coarse salt
- 2 cups/500 ml brown sugar
- Two 2-pound/1 kg extremely fresh salmon fillet (sushi grade), skin on
- 1 teaspoon/5 ml crushed Szechuan peppercorns
- 1/4 cup/60 ml vodka
- 1/4 cup/60 ml Dijon mustard

- Juice of 1 lemon
- 1/2 cup/125 ml olive oil

Avocado Spiced Sandwich

Halve and pit avocado. With a spoon, scoop out avocado flesh, cut into chunks, and transfer to a medium bowl
- 1 ripe avocado
- 1 tablespoon fresh orange juice
- 1/2 to 1 teaspoon green Tabasco sauce
- 1/4 teaspoon ground coriander
- 1/2 teaspoon coarse salt and pepper
- 1/2 cup yellow grape tomatoes, halved
- 1 small cucumber, peeled, halved lengthwise, seeded, and cut into 1/2-inch dice
- 1 large or 2 small radishes, halved and thinly sliced
- 2 whole-wheat pitas (6 inches each), top third cut off
- Use green Tabasco sauce, which is made with jalapenos. It has a kick like red Tabasco, but doesn't taste quite as vinegary.
- Per serving: 353 calories; 9 g protein; 17 g fat; 48 g carbs; 13 g fiber.

- 1 cup chicken broth
- 1 tablespoon cornstarch
- 4 cups coleslaw mix
- 1 cup salted cashews nuts
- 3 cups cooked white or brown rice
