Brown filet of beef, with salt and pepper, in a large skillet, browning quickly on all sides, about 10 minutes

- 3 lbs. trimmed filet of beef

- 2 pounds boneless, skinless chicken (breast leg or thigh)
- 1/2 cup diced yellow onion
- 1/2 cup medium-dice green bell peppers
- 1/4 cup roughly chopped cilantro leaves
- 2 teaspoons oregano leaves
- 3 tablespoons finely chopped garlic
- 2 teaspoons salt
- 2 teaspoons white pepper
- 4 cups (1 quart) water
Gruyere and Potato Gratin Recipe

Butter a 2 quart baking dish
- Custard:
- 1 1/4 lbs. potatoes boiled and cooled
- 1/2 C. sliced green onion
- salt and pepper to taste
- 1 C. heavy cream or half and half
- 2 large eggs
- 2 T. parsley chopped
- 4 oz. grated Gruyere cheese
Stuffed Mushrooms

Crank up the oven to 350 degrees
- 20 crimini or button mushrooms (large ones will weigh a total of about 1.5 pounds, and make sure you pick good, big ones!)
- 1/2 pound ground meat – Italian sausage is my recommendation
- 3 cloves of garlic, minced
- 2 tbsp olive oil
- 1 tsp oregano
- 1/2 tsp parsley
- 1 tsp onion powder
- 4 ounces grated, whole fat mozzarella cheese
- 8 ounces full fat cream cheese
