In a cup or small bowl, whisk together the eggs, mayonnaise and water using a fork
- 2 eggs
- 1 teaspoon mayonnaise or salad dressing
- 1 teaspoon water (optional)
- 1 teaspoon margarine or butter
- salt and pepper to taste (optional)
RUM AND MANGO MARINADE - Relish

- 3/4 C Light Rum
- 1/4 C Dark Rum
- 1 C Mango nectar
- 1 TBS Veg. Oil
- 1 TBS White Vinegar
- 1 tsp Kosher Salt

Zucchine Carpaccio with Ricotta Cheese

This beautiful side dish looks complicated but is very easy to assemble
- 5 medium zucchini, trimmed
- Coarse kosher salt
- Freshly ground black pepper
- 2 green onions, thinly sliced
- 3 tablespoons fresh lemon juice
- 3 tablespoons extra-virgin olive oil
- 1 2/3 C Ricotta Cheese
- 2 tablespoons chopped fresh basil

- 4 (3-ounce) filet mignon medallions, rinsed and patted dry
- 1 teaspoon Montreal steak seasoning (recommended: McCormick Grill Mates)
- 2 tablespoons unsalted butter
- 1 teaspoon crushed garlic (recommended: Christopher Ranch)
- 1 cup fresh sliced mushrooms
- 1/4 cup cognac
- 1 tablespoon steak sauce (recommended: A-1)
- 1/4 cup heavy cream
- 1/4 cup low-sodium beef broth (recommended: Swanson)
- 1 tablespoon chives, finely chopped

- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 ounces unsweetened chocolate, broken into 1/2-ounce pieces
- 2 ounces semisweet chocolate, broken into 1/2-ounce pieces

- 1 cup sugar
- 1 teaspoon pure vanilla extract
