Slow Cooked Vegetable Beef Soup

Russet potatoes are recommended due to the fact they are better suited for prolonged cooking
- Seasonings:
- 1 1/2 lb cubed stew beef, bite size cubes
- olive oil
- 1 large sweet onion, diced
- 1 medium red bell pepper, diced
- 2 ribs celery, sliced
- 4 cloves garlic, minced
- 10-12 oz frozen mixed vegetables, unthawed
- 2 [14.5] oz can Italian seasoned diced tomatoes
- 1 [14.5] oz can pinto/lima/great northern beans [your preference]
- 1 container Knorr homestyle beef stock
- 4-5 cups water
- 2 Tbsp Worcestershire sauce
- 5 medium russet potatoes, 1″ cubes
- 2 Tbsp sugar
- 1 tsp seasoned salt [more or less to your taste]
- 1 tsp black pepper
- 1 tsp dry Italian seasoning
- 1/2 tsp red pepper flakes
- 2 bay leaves
- End of cooking:
- 2 Tbsp chopped Italian parsley
- 4 Tbsp tomato paste to thicken
Simple Fried Chicken Breast Cutlets

Using thin chicken breast cutlets makes this a fast and easy dish to prepare and cook
- 4 boneless chicken breast cutlets* or small chicken breast halves, slightly flattened
- 1 large egg
- 3/4 cup milk, low fat is fine
- 1 to 2 tablespoons hot sauce, such as Frank's, Texas Pete, or Tabasco
- 1 large egg
- 1 cup all-purpose flour
- 1 teaspoon Cajun seasoning, preferably salt-free
- 1 teaspoon salt (1/2 teaspoon of the seasoning contains salt)
- 1 teaspoon ground black pepper
- vegetable oil, such as canola or peanut oil
- salt
Crown Roast of Pork

Preheat oven to 350 degrees F

- 1 (6 to 10-pound) crown roast of pork (5 pound roast is about 10 to 12 chops, serving 6)
- 2 tablespoons olive oil
- 2 tablespoons minced garlic
- Salt and freshly ground black pepper
- 4 tablespoons chopped sage
- 2 tablespoons chopped thyme
- 1 1/4 cups dry white wine
Southern Cheese Grits

In a saucepan over medium heat, melt 1 tablespoon butter
- 2 tablespoons unsalted butter
- 1 large jalapeno pepper, seeded and chopped
- 3/4 cup quick cooking grits
- 3 cups water
- 3/4 cup shredded Cheddar

- Baking 350 degrees F. for about 40 minutes
- 1 cup unbleached all-purpose flour

Apple Ebelskivers (Stuffed Apple Pancakes)

Mom's Summer Squash Recipe

1 Put onion, garlic, squash, bell pepper into a large saucepan with a couple of tablespoons of olive oil
- 2 lbs squash and/or zucchini, sliced
- 1 green bell pepper, seeds removed, sliced
- 2 smallish tomatoes or one large tomato, peeled and cut into wedges
- 1/2 yellow onion, peeled and sliced
- 1 clove of garlic, chopped
- Olive oil
- 5 or 6 slices of cheese - jack or cheddar
- Basil, either dry or chopped fresh
- Salt and pepper
Low-Fat Raspberry-Corn Muffins

Preheat the oven to 375 degrees F
- Cooking spray
- 1 1/2 cups all-purpose flour
- 2 1/2 cups yellow cornmeal
- 1 1/2 cups sugar
- 1 tablespoon baking powder
- 3/4 teaspoon salt
- 2 cups low-fat buttermilk
- 1/2 cup apricot nectar
- 3 tablespoons grapeseed oil
- 2 teaspoons vanilla extract
- 1 teaspoon grated orange zest
- 4 large egg whites
- 2 cups frozen raspberries
Spicy Baked Rigatoni

You can find many good brands of prepared tomato sauce in supermarkets
- 2 Tbsp olive oil
- 2 each sweet and hot Italian sausages, casings removed
- 12 oz. rigatoni pasta
- 2 cups of your favorite prepared marinara sauce
- 2 medium-size ripe tomatoes, diced
- 1/2 cup fresh basil leaves, torn coarsely
- 1 tsp dried oregano
- 1/4 tsp hot red-pepper flakes
- 12 oz. mozzarella (make 6 slices and dice the remainder)
- Salt and freshly ground black pepper, to taste
Spinach-and-Cheese Puff

Preheat oven to 350 degrees
- Bake up to 1 day ahead and refrigerate. Bring to room temperature, then cover with foil, and bake at 350 degrees for 20 minutes. Uncover and bake 20 minutes more.
