- INGREDIENTS
- Cornmeal
- 5 5 1/2 cups (27 1/2 ounces) bread flour
- 4 1/2 4 1/2 1/2 teaspoons instant or rapid-rise yeast
- 1 1 1 tablespoon sugar
- 2 2 2 teaspoons salt
- 1 1 1 teaspoon baking soda
- 3 3 to 120 whole milk, heated to 120 degrees
Cajun Spinach Stuffed Chicken Breast

Preheat oven to 350 degrees
- Ingredients:
- Serves 4
- Preparation time: 15 minutes
- Cooking time: 40 minutes
- 1 lb boneless, skinless chicken breasts
- 4 oz pepper jack cheese, shredded (you can use up to 6 oz)
- 1 c frozen spinach, thawed and drained (you can also use fresh cooked spinach)
- 2 tbsp olive oil
- 2 tbsp Cajun seasoning - click here for my homemade Cajun spice recipe
- 1 tbsp breadcrumbs (I use Italian style)
- Sea salt, to taste
- Freshly ground black pepper, to taste
- Lots of toothpicks
Broccoli Cheese Soup (PW)

Melt the butter in a pot over medium heat, and then add the onions

- Ingredients
- 1 stick butter
- 1 whole onion, diced
- 1/3 cup all-purpose flour
- 4 cups whole milk
- 2 cups half-and-half
- 1 pinch nutmeg
- 4 heads broccoli, cut into florets
- Salt and freshly ground black pepper
- 3 cups grated cheese (mild Cheddar, sharp Cheddar, Jack, etc.)
- Chicken broth, if needed
Coconut Cupcakes

Preheat the oven to 325 degrees F
- For the frosting:
- 3/4 pound (3 sticks) unsalted butter, room temperature
- 2 cups sugar
- 5 extra-large eggs at room temperature

Upside Down Sticky Toffee Pudding

Preheat oven to 350 degrees with a rack in the middle
- Nonstick cooking spray
- 5 ounces pitted dried dates
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon coarse salt

Old-Fashioned Carrot Salad

Peel the carrots and grate them in a food processor fitted with the large grating attachment

- 1/2 golden pineapple, peeled and chopped

Broiled Califlower Steaks with Parsley & Lemon

For the cauliflower: Place the first head of cauliflower upright (stem-side down) on a flat surface
- Cauliflower:
- 2 large heads cauliflower (2 to 2 1/2 pounds each)
- Kosher salt
- Two 13 1/2-ounce cans unsweetened coconut milk
- 2 tablespoons coriander seeds, lightly crushed
- 1 teaspoon red pepper flakes
- Vinaigrette:
- 2 tablespoons fresh lemon juice
- 2 tablespoons Dijon mustard
- 2 tablespoons red wine vinegar
- 2/3 cup extra-virgin olive oil
- Gremolata:
- 1 cup flat-leaf parsley leaves, chopped
- Zest of 1 lemon
