- 1 large onion, diced
- 5 medium red potatoes, sliced
- 1 15-oz. can great northern beans, drained and rinsed
- 1 teaspoon dried thyme
- 6 cloves garlic, minced
- 1/2 teaspoon paprika
- 1/2 teaspoon red pepper flakes

- 3 tablespoons drained capers
- 1 cup thinly sliced scallions (6 to 8 scallions)
