- 8 tablespoons (1 stick) butter, softened
- 1/2 cup extra-virgin olive oil
- 1/3 cup finely chopped chives
- Kosher salt and freshly ground black pepper
- 6 medium russet potatoes, scrubbed
BBQ Chicken Thighs with grilled Squash (Sandra Lee)

In a small bowl add all of the spice rub ingredients
- Spice Rub:
- 1 tablespoon brown sugar
- 1 1/2 tablespoons paprika
- 1 tablespoon garlic powder
- 1 1/2 tablespoons chili powder
- 1/4 teaspoon cayenne pepper
- 1 tablespoon salt
- 2 teaspoons freshly ground black pepper
- 3 pounds bone-in chicken thighs
- BBQ Sauce:
- 1/2 cup barbeque sauce
- 1 teaspoon freshly chopped garlic
- 1 tablespoon spicy brown mustard
- 1 tablespoon apple cider vinegar
- 1 tablespoon lemon juice
- 1 tablespoon hot sauce
- 1 teaspoon chili powder
- 1 tablespoon Worcestershire sauce
- Grilled Squash:
- 4 yellow squash, sliced lengthwise in 1/2
- 2 tablespoons canola oil
- 1/2 teaspoon salt
- 1/4 teaspoon freshly cracked black pepper
Easy Tzatziki Sauce with Toasted Pita Crisps

Place the yogurt in a medium bowl
- 2 (7-ounce) containers Greek yogurt (recommended: Fage Total)
- 1 hothouse cucumber, unpeeled and seeded
- 1/4 cup sour cream
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon white wine vinegar
- 1 tablespoon minced fresh dill
- 1 1/2 teaspoons minced garlic
- 2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- Toasted Pita Crisps, recipe follows
SKILLET DINNER

Melt 3 T of butter in a skillet (electric frying pan is great) and cook the 2 sliced onions until soft and golden
- 1 lb. ground beef
- 1 C bread crumbs
- nutmeg, to taste
- 1/4 C grated onion and 2 sliced onions
- 3/4 C milk
- A 10 oz. package of frozen peas
- 3 - 4 good size potatoes, sliced

- 1 1/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon freshly grated nutmeg
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter
- 1 cup granulated sugar
- 2 large eggs, room temperature
- 1 cup mashed ripe bananas (from about 3 large bananas)
- 1 tablespoon clover honey
- 1 cup chopped pecans
- 1/2 cup crushed pineapple, drained
- 1/4 cup hot water
- Vanilla Cream Cheese Frosting
- Makes enough for 1 dozen cupcakes
- 1/4 cup (1/2 stick) unsalted butter, room temperature
- 4 cups confectioners' sugar, sifted
- 1/4 teaspoon pure vanilla extract
- 6 ounces cream cheese, room temperature
- Place all ingredients in the bowl of an electric mixer fitted with the paddle attachment; beat until well combined. Continue mixing until frosting is light and fluffy, about 1 minute more.

- For the vinaigrette:
- 1 hothouse cucumber, unpeeled, seeded, and sliced 1/4-inch thick
- 1 red bell pepper, large-diced
- 1 yellow bell pepper, large-diced
- 1 pint cherry or grape tomatoes, halved
- 1/2 red onion, sliced in half-rounds
- 1/2 pound feta cheese, 1/2-inch diced (not crumbled)
- 1/2 cup calamata olives, pitted
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon Dijon mustard
- 1/4 cup good red wine vinegar
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper

Adjust oven rack to middle position and heat oven to 375 degrees
- 1 1/2 cups unbleached all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon kosher salt
- 1 3/4 sticks (7 ounces) unsalted butter, room temperature
- 1 cup granulated sugar
- 1/2 cup light brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup granola (or other cereal)
- 1/2 cup crushed salted pretzel pieces (or other salty snack food)
- 1 cup semi-sweet chocolate chips, chopped chocolate candies, or a small bar of good dark chocolate, chopped into chunks
- 1/2 cup chopped pecans or other nuts, optional
- (If you don't use nuts, you may want to add more cereal, snacks or chocolate to compensate.)
- You may want to add a little cinnamon, allspice, cardamom, or whatever you fancy. We didn't because we wanted the taste of the granola to come through.
