Angel Hair Pasta with Roasted Pepper Salsa and Chicken

Ingredients
- Pepper
- 1 tsp. balsamic vinegar
- 8 oz. chicken - cubed
- 1/2 cup chicken broth
- 3 Tbl. basil
- 1 tsp. lemon juice
- 1 clove garlic
- 1 Tbl. olive oil
- 3 red peppers
- 1/4 tsp. salt
- 1 Tbl. oil
- 1 yellow pepper
- Angel Hair Pasta

Preparation
Step 1
Roast peppers (grill or oven until blackened on all sides). Place in paper bag until cool. Peel off skin and remove seeds. Cut in 1/4 inch strips.
Toss peppers with basil, vinegar, lemon juice, garlic, salt and pepper.
Heat oil and cook chicken until cooked through. Add the roasted pepper salsa and stir, scraping the brown bits that stick to the pan. Remove from heat.
Cook past and drain (reserving 1/4 cup water). Add water and chicken broth to skillet with chicken miture. Add to pasta to lightly coat.
