Chipotle Pork Soft Tacos

This is a yummy, healthy mexican dish. Fresh ingredients, really tasty.

Ingredients
- 1 Tbsp Olive Oil
- 2 cloves garlic, minced
- 1 1/4 lb. pork tenderloin, cut in 1" cubes
- 1 can (8 oz) tomato sauce
- 1 to 2 tsp minced canned chipotle chiles in adobo sauce
- 1 tsp dried oregano
- 8 flour tortillas
- 1/2 cup crumbled queso fresco
- Top with sour cream, shredded lettuce, diced tomatoes, sliced avocado.

Preparation
Step 1
1. Heat oil in a large skillet over medium-high heat. Add garlic and cook for 1 minute. Add pork and cook until golden brown on all sides, about 5 minutes. Add tomato sauce, chipotles and oregano. Bring to a simmer and let simmer until pork is just cooked through (still slightly pink in the center) and sauce has reduced and thickened, about 3 minutes.
2. If desired, warm tortillas. Wrap them in a clean kitchen towel and warm in the microwave for 30 seconds on high.
3. Arrange pork on tortillas; top with cheese. Serve with sour cream, etc.
