Pasta - Farro OR Spelt OR Whole Wheat

Ingredients

  • 1 1/2 cup flour (farro, spelt or whole wheat)
  • 1/2 cup all purpose flour
  • 1 tsp olive oil
  • 4 eggs
  • 2 Tbsp water
  • pinch of salt

Preparation

Step 1

Mix flours. Place flour in a mound and create a "hole" in the center. (I do this in a large bowl for this recipe) Place the eggs in the "hole". Using a fork, incorporate the liquid into the flour mix. Once mixed, turn out on floured counter and knead, for roughly 10 minutes, until smooth and elastic. Place pasta in a sealed ziploc bag and let rest for 30 minutes.

Cook for 3-4 minutes
