Slow Cooker Sausage Breakfast Casserole

Ingredients

  • 1 26 or 32 oz. package frozen hash browns
  • 1 package Jimmy Deans sausage (cooked and crumbled)
  • 2 c. shredded mozzarella cheese
  • 1/2 c. shredded parmesan cheese
  • 1/2 c. sun-dried tomatoes
  • 6 green onions (sliced)
  • 12 eggs
  • 1 c. milk
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Preparation

Step 1

Spray a 6 quart slow cooker with cooking spray. Layer half of the potatoes on the bottom of cooker. Top with half of the sausage, cheeses, tomatoes and green onion. Repeat the layering. Beat eggs, milk, salt and pepper until blended. Pour evenly over the potato and sausage mixture. Cook on low setting for 8 hours or high setting for 4 hours, or until eggs are set.
