Ingredients

  • 6 oz whole wheat pasta
  • 4 tsp evoo
  • 3/4 lb boneless, skinless chicken breast cut into pieces
  • 1 sweet onion diced
  • 1 fennel bulb cored and diced
  • 1 tsp minced garlic
  • 1/4 tsp each salt and dried thyme
  • 1/4 c dry sherry
  • 3 t flour
  • 1 c chicken broth
  • 1 c low fat milk
  • 4 c baby spinach
  • 1/2 c parm
  • 1/4 c fresh chopped chives

Preparation

Step 1

1) cook pasta, drain, return to covered pot

2) meanwhile heat 2tsp oil, add chicken stirring once or twice til browned, about 4-6 minutes

3) add remaining oil, fennel, garlic, salt and thyme cook stirring often about 5-7 minutes til veggies are softened. add sherry and cook 1-2 minutes while stirring til evaporated. sprinkle with flour and stir to coat. add broth and milk increase heat to md high bring to simmer, stirring constantly. cook 2-3 minutes til sauce thickens .

4) add chicken and juices to skillet stirring often til it cooks thru about 3 minutes

5) add spinach and cook til it wilts, about 1 minute. remove from heat stir in parm and chives. stir chicken and sauce into pasta, season with pepper
