Sausage Fried Rice

Ingredients

  • 4 oz. sausage meat
  • 1/3 cup uncooked rice
  • 1 small onion, peeled and finely chopped
  • 4 medium-size mushrooms, thinly sliced
  • 1/2 clove garlic, peeled and finely chopped
  • 2 small tomatoes, peeled and chopped, or 1 can (215g) tomato pieces with the juice
  • 1/4 cup water
  • 1/2 teaspoon salt
  • Pinch black pepper
  • 2 or 3 drops Tabasco sauce
  • 1 tablespoon chopped parsley

Preparation

Step 1

1. Cook the sausage meat, uncovered, in a medium-size, heavy frying pan over moderate heat for 3 minutes, stirring occasionally. Add the rice, onion and mushrooms, and cook for 3 minutes, stirring frequently.

2. Add the garlic, tomatoes, water, salt and pepper. Cover, and simmer for 20 minutes, or until the rice is tender. Stir in the Tabasco sauce and parsley, and serve.
