Ingredients
- 1/2 lb uncooked med shrimp,peeled and deveined.
- 1/2 lb sliced, calamari
- 1/2 lb bay scallops
- 1 cup diced red onions
- 1 cup chopped fresh cilantro
- 1 tbs finely chopped cilantro
- 3 tbs olive oil
- Juice of 1 orange (1/3 cup)
- Juice of 1 lemon (1/4 cup)
- Juice of 1 lime (3 tbs)
- 1/2 teas salt
- 1/4 tsp pepper

Preparation
Step 1
1. In 3 qt saucepan, heat 8 cups water to boiling. Meanwhile chop shrimp, calamari and scallops, add to boiling water. Let stand 2-3 min or until meat thermometer reads 145 degrees and seafood is opaque in center; drain and rinse with cold water
2. In large bowl, mix remaining ingredients. Stir in seafood; mix well. Cover; refrigerate 8 hours of overnight.
