Ingredients

  • 1/2 lb uncooked med shrimp,peeled and deveined.
  • 1/2 lb sliced, calamari
  • 1/2 lb bay scallops
  • 1 cup diced red onions
  • 1 cup chopped fresh cilantro
  • 1 tbs finely chopped cilantro
  • 3 tbs olive oil
  • Juice of 1 orange (1/3 cup)
  • Juice of 1 lemon (1/4 cup)
  • Juice of 1 lime (3 tbs)
  • 1/2 teas salt
  • 1/4 tsp pepper

Preparation

Step 1

1. In 3 qt saucepan, heat 8 cups water to boiling. Meanwhile chop shrimp, calamari and scallops, add to boiling water. Let stand 2-3 min or until meat thermometer reads 145 degrees and seafood is opaque in center; drain and rinse with cold water

2. In large bowl, mix remaining ingredients. Stir in seafood; mix well. Cover; refrigerate 8 hours of overnight.
