Ingredients

  • 1-2 lb turkey tenderloins
  • 1/2 cup flour
  • 16 oz sliced mushrooms
  • 4 cloves garlic, minced
  • 3/4 cup chicken broth
  • 1 lb pasta
  • 1/2 tsp salt
  • 2 TBS veggie oil
  • 1/4 cup capers
  • 1 1/2 cup whipping cream
  • 2-4 TBS lemon juice

Preparation

Step 1

1. Sprinkle turkey with 1/2 tsp salt, dredge in flour
2. Cook in hot oil in a large non stick pan over medium heat 3 minutes each side.
3. Remove from skillet add mushrooms, saute 7-9 minutes till golden brown.
4. Add capers, 1/4 tsp salt and saute 2 minutes, stir in whipping cream, chicken broth. Reduce heat to medium simmer 20 minutes until sauce is thick, stir in lemon juice.
5. Cook pasta, drain and return to pan.
6. Stir in turkey mixture with pasta and serve.
