Gnocchi alla Primavera

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1/8 teaspoon crushed red pepper
  • 3 cloves garlic, minced
  • ½ cup scallions
  • 6 ounces sliced cremini mushrooms
  • 26 ounce jar tomato sauce
  • 6 ounce can tomato paste
  • 1/3 cup red wine
  • 3 tablespoons chopped fresh marjoram
  • 1 ½ cups sliced zucchini
  • 2 tablespoons capers, rinsed
  • 1 pound package gnocchi

Preparation

Step 1

Bring a large pot of water to a boil. Meanwhile, heat oil and crushed red pepper in a 5 quart saucepan over medium-high heat for 1 minute. Add garlic and scallions; sauté for 2 minutes and add mushrooms. Cook mixture for 3 minute. Reduce heat to low and add tomato sauce, tomato paste, wine, marjoram, zucchini and capers. Cook, stirring occasionally until ready to serve.

Add gnocchi to boiling water and cook until they rise to the top of the pan. Drain and combine with sauce. Serve in bowls.
